When you are designing a study you wouldn't have these values upfront, i.e. you would not know these totals. Does that mean you have more df. Is the thinking that eventhough it is a variable, once you define a subset, the other is already defined? Please elaborate.

I understand why we know the total male and females on the last column because we can choose who to survey but how do we already know the last row of the number of people who like coke or sprite. It seems to me that we can't know those values without two data points.
