Great Turkey & Chicken Brine! (Sweet, Heat, Spice, Citrus, Honey!)

  • Great Turkey and Chicken Brine Recipe!
    1 gallon of "apple cider" (The kind you drink)
    1/2 cup apple cider vinegar
    1 cup Kosher salt
    1 cup of brown sugar
    8 cloves of garlic
    2 tbsp. red pepper flakes
    1 big red onion thick slicked
    2 oranges quartered (squeeze some juice in the pot)
    2 lemons quartered (squeeze some juice in the pot)
    1 cup cubed up ginger root
    A sprig each of rosemary, sage, and thyme
    7 cloves, 1/4 cup pure maple syrup, 1/4 cup honey
    Bring mixture to a boil for only 1 to 3 minutes then cool
    Submerge your bird in the cold brine for 8 to 24 hours,
    rinse then cook. Enjoy!

    This brine is amazing! 24 hour soak on chicken wings and thighs then smoked with applewood at 225 for 90 minutes and basted with butter. Family could not believe how good they were. They even refused to use BBQ sauce. But, you may want to strain the brine before adding your chicken. You don’t want to have to rinse away any of that delicious brine. Thank you S.R.

    Best brine ever for Turkey! I've used this for the past three years and it's become a staple for all poultry. Best turkey I've ever done since using this recipe. I smoke my turkeys and I use the spatchcock method for the turkey. Doing both makes the best turkey ever!

    Please tell me ,how long do you boil the brine?

      When dissolved, add the spices and/or flavorings and bring to a full boil for 1 to 2 minutes. Tip: There is no need to boil all the brine liquid because you can fully dissolve the salt and sugar and extract the flavor out of any seasonings in 1½ cups of liquid.

    Not sure about Chicken , but I would use this on Pork for sure.

      This brine will work well with any poultry, including chicken. As a matter of fact, it's even better with chicken! Pork works well, too!

    Is the brine being cold necessary? Or can I put the chicken in while the brine is warm??

      The brine should always be cold before you add the meat so you should refrigerate it before you add the meat. You don't want the brine cooking the meat. At this point, you can add other brine ingredients like juices or cut up fruit. Submerge the meat into the brine.

    Question... brine and inject? seems like to much...

      BRINE ONLY! What i did was use this recipe to brine the turkey and then just before roasting it I then inject the turkey with Tony Chachere's Creole Roasted Garlic & Herb OR their Butter injection. Just about every grocery store carries at least one or two of this brand's injection (found in the isle where the cooking oils are) You can also order it on Amazon. I live in Montana and they have it, and since we have it, then everyone else will have it. :)

      @@porsche944mt so I used Red's brine and a simple injection I found somewhere else. It was super tasty but I can't help but wonder if the injection overpowered the brine or vice a versa. My taste buds are good enough to ascertain the turkey was yummy but not enough to figure out if one overpowered the other, so was to much. I'm looking forward to trying this out with just the brine. Honestly, I almost wanted to turn the brine into a soup it smelled so good.

      To make sure all the spices have been desolved. It doesnt have to boil long but needs to be smooth of spices.😊

    in today's inflation that Brine would be about $25-$30 not including the $30-$40 turkey
