Its good to somtimes go over the basics again.
Manual with auto ISO is my way. But is near aperture priority, because the first thing i set is the aperture most of the time. Sometimes i go for high shutter speed first, like pigeons start flying, skaters, etc
I do exactly the same! It works fine.

Good tips! I have gotten so used to setting everything myself (especially ISO), that I have sort of forgotten that I could let the camera do some of the work and still get the result that I want. Sometimes I am too stubborn and think I can do things better myself - that's not always true!
for street photography I use the Sony RX100 mk5 point and shoot camera which has a 24-70 equivalent lens (my full frame rig is too attention getting when trying to take candids in public).
I use very similar settings to what you use in the video: aperture priority with auto ISO, minimum shutter speed, auto ND filter (comes on in bright light with wide apertures). I also use highlight metering to prevent clipping in high contrast scenes.
the only thing that i'm missing (from sony) in my gfx100 2 is auto iso min ss "slower/slow/normal(1/focallenght)/fast/faster" with the push of a button 🙃
1/250 for shutter speed, ISO 160-800, f8. These are my daylight settings for street photography. Manual mode.X100V.
The mosquito's are missing you 😅
If I "have time" to shoot full manual even when doing birds in flight, then you have it on the street too. Not saying you should, but don't give me that whole "I don't have time" excuse; just say it's more comfortable to use auto.
And topping out at ISO 2500 on a modern sensor and with the excellent noise removal available in post... that's kinda like running with a hand tied behind your back.
