- Hope you all enjoy this Blackfin Tuna catch and cook. The Tuna Recipe came out mighty tasty and especially with those flavorful grill marks. You may have noticed we bleed the tunas by ripping their gills open, as we had no knife on board. Bleeding a fish is common practice, and reduces the fishy taste of fish. Look forward to many more catch n cooks, as well as offshore saltwater fishing videos.

Another A+ episode--- you guilted me into cleaning my grill. Besides the grills on display at Home Depot, yours is the cleanest homeowner grill I've ever seen.
That tuna looks like it's pretty well done...I prefer medium rare myself though. I'll have to try that recipe.

Some sushi chefs actually will age their tuna in coolers for a couple to a few days.
A lot of sushi places don't have fresh tuna, that is correct.
But you can age it, and it will actually taste better.
Same concept as Soy Sauce when it's made :)

Hey Victor. Great video but a couple of things If that's ok. Salt your tuna lightly wrap in plastic tightly and let sit in fridge for 3-4 days. Then cook or sushi it up. You'll love it. Also turn that grill all the up and close the lid for 5-10 minutes you want it as hot as you can get it then grill the tuna about 3 minutes each side depending on thickness let rest a couple minutes done on the outside rare on the inside. Slice like a roast. 1in thick. The best!!!! Dude use real lemons. Your in Florida.

I was a commercial fisherman in SoCal and we used hook and line. 30-50 hooks with squid for bait. 25 lb steel weight on 1000 lb braid with 120 lb mono leaders. Electric winch to pull it up from 600 feet fishing for rock fish or as its called in CA rock cod. We sometimes fished for a chain of Chinese restaurants and I ended up filleting 2 tons of fish and if we wanted to keep the account I didn't cut into the stomach area and have the gunk spilling on the meat. I also filleted fast too, so speed wasn't an issue. My filets smelled more like watermelon as the fish were bled out (by removing the gills) and put on ice immediately. Never let them go uncleaned for more than 8 hours. Any good eating fish (or not so good) will always be improved by this method. People that didn't like fish liked mine. The tunas are a red meat fish and they are helped immensely by being bled.

if you want to get better marks from the grill on the fish, after marinating the fish, pat it dry, that will leave you with way better grill marks!!

Blue fin tuna used for sushi tends to be frozen for a certain amount of weeks to allow the fish to actually develop more flavour not 100% sure on all the details but i'm sure someone out here knows
Actually it needs to be frozen for a certain amount of time to kill off any parasites. Eating that raw straight out of the ocean? Amateur hour... And certainly not better than any sushi bar...

Ok Victor a little advice for your veggies for the grill, cut them thicker, easier to handle and won't stick so much !! Also, tuna for sushi is better older, even frozen, the flavor develops !!! I know fresh sound good , but the Japanese don't think so for flavor !! I would eat it fresh because I don't wanna wait..................=) also grilling tuna is not as good as a good sear to med-rare in a heavy skillet !!! Just saying Victor but nice catch anyways !!!

It's called vacuum packing it !!! I prefer to eat tuna fresh also , not stock pile any , other fish freeze better.................I know the fat contents of alot of meats and seafoods, as I have cooked for over 16 years !! THX

FYI Tuna used for sushi/sashimi is actually meant to age for 3-4 days anyway like you would age steak, so fresh from the sea isnt eating raw tuna at its best :) great videos though

By the way since tuna be so massive aging the fish can develop the flavor and reduce the sinew in the fish.
How about when you cook like that tell how high or low you are running the grill and how long you cooked on each side

if u bleed a fish it taste better not true. u have to season it correctly, I salt it leave for minimum of 24hrs n boom great taste. I don't bleed fish I have caught.
Tuna, along with other species, are bled due to the mercury levels.

Bleeding a tuna is very gorry
all fish you keep and are going to eat you should bleed! there meat will be much better, blood just breaks down the meat faster and leave a fishy taste. I promise any fish will taste better bleed! Some aren't edible unless bleed(like tuna) great video once again!

Nice videos but can you please handle the fish more carefully. In almost every catch, the fish is either thrown all over the boat or just generally fucked up. Why not kill it humanely man? Don't need to rip the it's throat out like that. A bat to the head, spike the brain & iki jime to bleed. Less stress on the fish = tastier meet, guaranteed. Japanese got this right, try out out.
