Let's not forget that the Devil is a swindler and will use loopholes to get what he wants. In this scene, it was Johnny Blaze's soul, even if Johnny did not "Technically" agree to the terms of the contract, his blood was equally binding him to the contract.
Peter Fonda as Mephisto is damn perfect, it's as if they took Mephisto straight out of the comics. All he needed was a crimson trenchcoat instead of black.

No he did not cut himself accidentally. Mephisto tricked him. You can see that he looked at the finger of Johnny, he used his powers to forcefully make Johnny cut his finger and drop the blood at the right spot. He didn't give Johnny the time to read the whole letter. He cheated.
I know it’s a blood spell or whatever, but shouldn’t Johnny willing give up his soul by signing the contract out of his own free will? Isn’t that how it works? He was reading it the contract, and never consent to anything. If it’s just his blood the devil wanted, he could’ve knocked him out and take the blood.
