Recreate my favorite dessert! Vegan Strawberry Tiramisu (gluten-free, oil-free, refined-sugar-free)

This is a super delicious, vegan, gluten-free, refined-sugar-free, and oil-free strawberry tiramisu!🍓
Decades ago, there was a cake shop called Berry Milk, which was famous for its strawberry cake and was my family's favorite. But it suddenly closed, and we never had any other dessert that surpassed it. But this strawberry tiramisu makes me feel that I found the 'lost deliciousness' back!
Soft vegan sponge cake covered with homemade maple strawberry sauce and cashew-based 'mascarpone cheese', this strawberry tiramisu is SOOOO DELICIOUS and heavenly💓
Though I cannot go back to be the kid eating that long-lost strawberry cake, I feel so heartfelt to recreate that familiar taste. And I hope you will love this beutiful dessert as much as I do! :)

Ingredients
Maple Strawberry Sauce
180 g frozen strawberries
1 Tbsp maple syrup
60 ml water
1 Tbsp lemon juice
Vegan Sponge Cake
150 ml unsweetened soy milk
1/2 tsp apple cider vinegar
150 g gluten-free self-rising flour
48 g almond flour
1/4 tsp baking soda
1/8 tsp salt
1.5 Tbsp coconut sugar
3 Tbsp maple syrup
1/2 tsp pure vanilla extract
1/4 tsp almond extract
"Mascarpone Cheese" Cream
130 g raw cashews
120 g coconut cream
1.5 Tbsp maple syrup
60 ml unsweetened soy milk
1/2 Tbsp lemon juice
1/8 tsp salt
6 g cocoa butter
Decoration
6-9 fresh strawberries
