Virgilio Martínez of Central in Lima on biodiversity from Andes to Amazon

Virgilio Martínez, whose restaurant Central in Lima topped the Latin America's 50 Best Restaurants list three times from 2014 to 2016, talks about how he connects Andean and Amazonian communities with a western audience and his plans for a new project in the Peruvian Amazon at #50BestTalks: Voices for Change, presented by Miele at Dogpatch Studios in San Francisco in September 2018. Martínez is part of the team behind Mater Iniciativa, the Peruvian research project behind restaurants Central, Mil and Kjolle.
