      I just bought some dummy cakes to practice. I think an excellent video idea, and one I haven't seen yet is a tutorial on ways to practice on dummy cakes, and one on what the most important tools to have when you start.

    I have been binge watching your tutorials while working out. Thank you for sharing your skills, tips, and tricks with us! My son is asking for a Shadow cake. He's similar to Sonic just different colors. My question is, how far in advance could I start making this cake as I have three kiddos and not hours and hours a day to devote to the cake. Do you mind sharing a timeline? For example,
    Day 1. Bake cakes and make buttercream
    Day 2. Ice cakes and refrigerate and make fondant.
    Day 3. Make fondant decor
    Day 4. Place fondant and fondant decor pieces on cake.
    Day 5. Just in refrigerator
    Day 6. Party

    Watching you decorate this cake makes it look so smooth and easy. Love all the way you explain everything. I am visual learner and all you do and say makes perfect sense to me. I also use a PC, lol. I noticed you are using glasses when working with the details. I am about to turn 44 next week and recently started to use glasses to work on small details too.       No, I just put them in the fridge unwrapped and not covered. I only wrap them up once I'm done decorating them!

    How long do you want you leave your fondant cakes in the frig before delivering and are they covered while in frig?

      They are usually in there 3-4 days. I will wrap them up if there is room for them to be wrapped in the box. If there's not a lot of room (if I have a lot of cakes that week), then I will wrap them up right before they get picked up.

      Are you asking if you can ice the sonic head in buttercream instead of covering it in fondant? And then decorate with the fondant pieces? If so, you definitely can! I chose to cover the cake in fondant so it would be the same color as the decorations as it can be a little challenging to dye buttercream and fondant the same color.

    Could I make this cake iced with buttercream (no fondant) and the decor pieces be fondant only? I'm assuming I could use the gel to adhere the fondant to the buttercream as well?

      Yes you can! And you can use gel to adhere the fondant to the buttercream. It can be a little challenging to color fondant the same color as buttercream, that's why I opted to do it this way. Just pay attention to how much coloring you're adding and remember that buttercream color deepens as it sits. So I'd wait to dye the fondant until the day after you frost the cake.

      Thank you! I am still relatively new at this and I don’t have professional filming equipment. So I’m working with my phone and a ring light stand and can’t really do head on shots while I’m standing and working. Is it hard to see what I’m doing? I can try to get a better angle in the future.

    I watched your fondant for beginners and I want to ask what is the purpose of the buttercream frosting? Does it hold the fondant or is it supposed to be icing on the cake under the decorative fondant?

      The buttercream holds the cake together and gives it shape. I refrigerate my cakes. So when I cover them with fondant, the buttercream icing is hard and won't get messed up. The fondant takes the shape of the icing underneath. Also, most people like to have icing on their cake. Not many like fondant, so they can eat the cake and icing and leave the fondant on the plate!

      A little bit of brown (not too much or it will be too dark), plus a TEENY bit of green to cancel out the pink hue in the brown, plus a tiny bit of gold / yellow to warm it up.

      You have to measure the height of your cake once you have it frosted / covered in fondant. That way, you can see how much room you have and make it the correct height. I believe this one was around 4.75 inches high.

    When you're working with a fondant cake, can you return it to the fridge until your ready for the next detail to be added? Don't you have to worry about condensation forming on the cake when it goes in and out of the fridge?

      I always have refrigerated my cakes, and I always take them in and out of the fridge as I am working on them.

    Gooood Morning! So, I attempted the sonic cake and I had a issue with the Marshmallow fondant. I made the marshmallow according to your recipe but it didn't ball on my hook so I added a little more powder sugar and it still did not ball but it held together when I removed. I colored and added Tylose and let sit. I was unable to trace because my tool would just go thru so I added more Tylose and let sit, after a few tries eventually was able to trace but when I cut with Xactoknife it was soft to cut. So any advice would be appreciated. Good news is that I smoothed by butter cream great and was able to cover my cakes, however I did have a small tear and not sure if it was because I let the cake sit out too long or what. So needless to say that I did not (yet) accomplish this sonic the hedgehog, but I put a few portal rings and bought a sonic figure and gave it some sparkle and the 6 year old was so happy. Karolyn I just have to master this cake design, I hate being defeated-my parents always said try & try again.

      Oh no! If it didn't ball around the hook, then it would be too soft. Sounds like you may have had to add even more sugar. If your fondant is too soft to begin with, no amount of Tylose will help! I have to think of how to do a video on making fondant and the issues that come up.

    Yes!, instead of roller cutter I suggest my wife to use steel scale/ruler, so the cut is perfect in just one shot. In here I would also suggest to place those two different colors strips in sequence one after other color horizontally and then cut out using steel scale this time vertically. width of scale will make perfect squares damn fast... isn't it. By the way your life saver tip was tylose powder from the other video we saw very first time. It was a biggest challenge for her to deal with fondant without. Thanks Karolyns!

      @@KarolynsKakes Thanks for the note Karolyns, my wife asking about shortening you mixed in fondant, which one is that, the one used in puff pastry OR it's specific for fondant/cakes? How your fondant is so smooth and doesn't break on top corners of cake due to its own load/weight?

      @@tabish6765 the shortening I use while handling fondant is just regular vegetable shortening (nothing special). It just prevents my hands from sticking to the fondant.

    I love your technique! I plan to make this cake but on a ¼” sheet pan cake. I’m hesitant to use fondant. My question is…if I make it using fondant, what happens when it is cut in to? The kids don’t eat the fondant so my thought is that you have to pull it off prior to cutting the cake? But, if I made it with fondant, I could make it well in advance. Or, I could make a transfer of it using buttercream but, then, I can’t make it in advance. I’m so torn. What to do??

      Fondant is like kale on a dinner plate. It's a garnish that makes it look pretty, but you rarely eat it. You just leave it there! Same for fondant. You just eat the cake and icing underneath and leave the fondant on the plate!

      Yes! The reason I covered it in fondant is because it can be a little difficult to match the royal blue fondant to the royal blue icing. I didn't want the colors to be off.

      Ahhh I forgot to mention that! I find that it's easier to pop any air bubbles that may form if it's not sticking to the top. I have done it in the past where I got a big bubble and couldn't get rid of it so I just stopped putting it on the top. Does that make sense?

      After you frost your cakes, take a ruler and measure how tall each tier is. Print out the pictures however tall you want them to be against the cake.😊

      I'm not sure if I want to put that out there just because pricing can vary depending on the area and other factors so I don't want people to feel they are over or under charging based on what I charge. But it is a 4" / 6" tiered cake, and that feeds up to 20. :)

      If you're tracing the picture onto fondant, you can use a regular printer. If you want to print an edible image (not cut the pieces out of fondant), you'll need an edible image printer system with edible ink and icing paper.

      I'm not sure what you're asking, the 4" cake is two cakes, baked in a 4 x 3 pan. The 6" cake is 2 cakes baked in a 6 x 2 pan.
