We make something similar with boneless chicken thighs with diced tomatoes and Spanish rice that is to die for. So much so when we make it we make a double batch.
Can't go wrong with chicken and rice. I like to use boneless/skinless thighs and cut the up into bite size pieces after getting color. Plus replace part of the broth with cream of mushroom soup.
Love me some cream of mushroom! Was a staple with my mother! Porcupine meatballs with cream of mushroom gravy! Meatloaf with cream of mushroom gravy! Chicken enchiladas!!! 1 can green chili sauce, and 1 can, you guessed it!! Cream of Mushroom 😊 lay em out like cards! No rolling, no cracking tortillas! Lay out a hand of corn tortillas in a pan, layer chicken mixed with enchilada sauce mixture, lay out a hand of tortillas, layer cheese...rinse repeat till pan is full👍

It's a burger with green chili stew smothered on top. Perfect for this time of the year! The chile can go on burritos as well! If you need the recipe for the green chile I can send mine over. i used this the next day for burrito stuffing, diced up a thigh, and it was the best burrito i ever made. i added a little bit much of the chipotle sauce the night before which made me think of it. i heated up the filling, rolled it up and toasted it in the air fryer for 6 min, then topped it with sour cream, salsa verde and chiltepin hot sauce. served with chips. will be a new staple. so easy.

I made this tonight as almost instructed and my gosh, what a treat. I love spice and have done all of the one chip challenges, but have to be careful when I cook for the family. I put the chipotle peppers in a glass and pureed them with a hand blender. I used a spoonful-ish and that was the perfect amount. Like a lime forward with an immediate earthy rice/onion to tame it, and then the spice on the back end. My favorite one pan chicken dish for sure.
Made this and it was very tasty. Next time I'd go lighter on the oil and brine or marinate the chicken. The rice had great flavor but the meat didn't absorb the salt and spices.
I make this all the time I like my rice a little more on the dry side but it's a quick easy meal to make that will feed a large sum of folk. Also I throw a few serranos in there for a little heat.

Maybe with raw onion but cooked onion, done right, is essential. Even if you do a finer dice, or blend (if its a texture thing), onion is the cheapest way to deep flavor and umami
I made it tonight - Delicious, but a little too much chicken fat gets into the finished dish for my preference. Maybe discard the oil & fat after browning chicken and start fresh with a little oil for the onions, then assemble???

Since it is winter, it is a great time of year for hearty meals, why not introduce your viewers to, Alsacien style sauerkraut, or also known as, garnished sauerkraut. We make this at least once each winter and have found that many Americans have never had it, or even heard of it. Doesn’t have to be fancy or expensive if you use grocery store ingredients, like stadium brats, country style pork ribs, jarred sauerkraut, hot dogs, etc. Love your channel, keep those entertaining videos coming.

We've made this one a few times now, it's so good! What really makes it complete is a can of black beans. You should try it!
