Antalya Piyazı
Servings: 4-6
Difficulty: Easy
Cooking time: 8 minutes
Prep time: 10 minutes
Ingredients:
500 g boiled or canned white beans
1 big pink tomato, diced
2 onions, “piyazlık” cut (thinly sliced) and rubbed with a pinch of salt
½ bunch parsley, chopped
1-2 pinches salt
3 tablespoons olive oil
1 tablespoon white wine vinegar
2 eggs, hard boiled and halved
For the sauce;
200 ml cooking water of beans
3 tablespoons boiled white beans
6 tablespoons tahini
3 tablespoons white wine vinegar
Directions:
• To make the perfect piyaz sauce, put 3 tablespoons boiled white beans into the water that you boiled your beans, add tahini and vinegar then mash and mix with a potato masher. Pour this beauty into your serving plate.
• Mix boiled white beans, tomatoes, onions, parsley, salt, olive oil and vinegar in the same bowl.
• Pour the mixture over the sauce and place the boiled eggs.
• You can sprinkle some hot red pepper flakes and more chopped parsley.

You are doing a great job for the society❤️ I was a hard core non vegetarian till I visited a farm and witnessed the horror of the dairy industry. The cow is inseminated painfully every 6 months so that calf is born. The calves are taken away immediately without a single drop of milk. The male calves are transported to the slaughterhouse to be killed on the very day. This process continues for some years till the cow is completely exhausted and later sold for meat. That’s the milk we consume. I literally had sleepless nights after watching the cows, their udders become so big they can’t even move. And they run to save their babies from going to the slaughterhouse.
Thank you for these recepies so that people can choose compassion in their plate instead of pain.

Great dish! I love pilaki so I'm sure I'll like this too. Do an episode making pine cone jam, sage jam, or one of the other less common types of jam from your breakfast video. I am so curious about these unusual types of jam. Also, tazi fasulye is so good. I make it like my mother did. I watched your version on the turkish channel but I think people would really like it. It's also vegetarian/vegan.

Tomatoes, I have seen Turkish, Spanish and Canary Island one for sale on the Uk and here in Ireland but the best are the ones I grow myself in a polytunnel many kilos of them. These are then canned (bottled), frozen or dehydrated to carry the family through to next year. The taste of them is beyond compare.

Yum! I'd love to learn about winter vegetable dishes. Where I live fresh "winter" vegetables are generally long-storing root vegetables like beets, carrots, potatoes, parsnips, sweet potatoes, various squashes. Generally broccoli and kale are available into early winter. What veg are commonly eaten in Turkiye in winter months?

So good. I'd love to see more bean recipes. Today's prices are crazy, but beans have so far remained reasonable, at least in Canada. That and cabbage, which I don't think is your thing. Anyway, in addition to bean recipes, did you ever do your sustainability video? I love the philosophy you speak of. Bereket. I'd love to know more about your "seed bank" for example. This dish is delicious!

Hi Refika. Can you show us a vegetarian Moussaka? We have a Turkish restaurant that makes it delicious but it is almost an hour away. I would like to make it at home. It’s topping is a Béchamel but I believe it also has a cheese in it.
İn Türkiye,we don't use bechamel for musakka and vegetarian musakka(imambayıldı).Just vegetables(ognion,tomato,ail,eggplant) and oil olives.
@@pinar3516 Yes. I’m aware. I believe the Turkish restaurant we go to in NY has created this mash up recipe and I can tell you it is absolutely fabulous. The topping is creamy and melty. It goes under the broiler for yummy brown peaks of goodness. I suggested it because if anyone could dream up something similar I’m sure Refika and her team could and it would be amazing. 😋

Someone in my household is allergic to sesame to the point it quickly becomes a medical emergency, so I was wondering in response to your request for suggestions whether you might be able to do an additional video on meze recipes (Mediterranean or fusion, doesn't matter) that can be made without tahini?
Quite curious to see how others here might cope with my problem.
Would love to do up some inspiration so that the person in question doesn't have to feel like they are missing out all the time (who doesn't love sharing small plates of food with friends and family) and can also still reap the health benefits of a med diet.
Well, I have no idea how it would taste but maybe you can try unsweetened peanut butter. I saw a youtuber making a savory pasta sauce with tahini, she was suggesting to substitute it with peanut butter in case you did not have tahini. Maybe you can try it. I personally have to say that it is very hard to replicate tahini in this particular dish because it is literally where most of the flavor comes from, and one of the 2 main ingredients together with the beans. You can take the tahini out of course, I am sure it will be delicious but you'll have a bean salad in that case, not a piyaz so it becomes a different dish.
@@B.Y.B.Y. peanut butter might work for some dishes, indeed. Good idea and thanks so much for sharing. I have tried it once before. I wanted to make hummus when I was in India for an extended period of time (started having withdrawal symptoms for hummus after 8 weeks cold turkey haha). I could neither find sesame seeds nor tahini in the area I was in, so I did use peanut butter. But I don't actually have any real memory of what it tasted like. It wasn't bad, that much I can say, but I've never done it since either.
Just thinking because peanuts have quite a strong flavour, I guess I could try something like cashews or almonds, but you're right in that it'll never taste the same. It's the bitterness I think. Very hard to replicate. Thanks again!
