Shouldn't enzymes and substrates have an induced-fit model instead of lock-and-key since enzymes can change shapes to better accommodate their specific substrates?

How does immobilised enzymes differ to normal enzyme process? Or is it part of the same thing...
The process is the same, but with immobilised enzymes - the enzyme is fixed to a solid substrate so it is not washed away - useful in biotechnology.
