She was not rude rather she was straight forward and didn't do the gimmick which mordern cooks do which is they are concerned about everthing except for cooking.people eat food in high end restraunt not because it tastes good but because they just wanted to show off that they can afford to do so.

The lady was so elegant n the language was so sophiscated . Interesting, Dhaga Kabab is available commonly in Karachi, a lot of Lucknowi people immigrated here in and after 1947, so maybe the recipe lived on with the immigrants but fell out of fashion in Lucknow itself.
It is available in many traditional muslim homes in lucknow. Lucknow did not see much migration in 1947 partation. Most of lucknow Muslims lived back in lucknow after partation in 1947. Only some rich elites migrated. But, most Muslims lived back in lucknow.
@@MRI0987 suta kabab is sold at old traditional eateries mostly in the Zakaria street area of Kolkata. Adam's Kabab shop is one of the pioneers of it here in kolkata.
We have something called Shuti kabab/dora kabab in old Dhaka too. The makers of such kebabs are usually Urdu speaking cooks, usually available during Ramadan. Wonder if it’s the same thing? 🤔

Hi Aditya, Bater Dum Pukht and kayasth cuisine has a very interesting link with the Grand master of story telling Premchand ,himself an awadhi kayasth. He wrote "Bade Ghar ki beti" story where there is fight over cooking bater by sister in law from a rich family married to a family not so rich. You will connect quantity of ghee and bater with the story!
Very interesting indeed to delve into the history of the lost recipes of Lukhnow. Some of these I believe are there in a slight variations. Like the Dora Kabab we in Dhaka, Bangladesh have an old Nawabi Kabab known as Shutli Kabab (Shutli - means string like dora). The flavors are similar but with a little bit more on heat side - from the garam masala especially cloves. It's only available in old part of the city that used to be the capital of India in 1600 during the Mughal era. Growing up we visited the old Dhaka where most of relatives lived for Sunday brunch and the Shutli Kabab with Baqar Khani (dry flat bread that had ghee and the special Dhaka cheese). Although, that kind of shutli kabab is no longer there because the recipes passing through generations have changed and there is a paucity of ingredients as well. Most importantly the customers who appreciate these kinds of recipes are now dwindling.
What a video! As a Pakistani and a huge desi food fanatic, this was what a masterclass in desi cooking. I have always been interested in the stories behind our beloved desi dishes/cuisine and this was such a delight to watch!
