Garum was an ancient Roman fish sauce that was surprisingly common. Though it had many different recipes (and terms), ancient writers referenced it often, and the Roman empire was dotted with garum factories. Vox's Phil Edwards made one of the variations of garum (and got his hands dirty in the process).

I've actually had this before, we ate it for our Latin class and I have to say it was quite good. Strong taste that certainly isn't for everyone, but it's got character and it really feels like you're eating a 1000 year old fish.

Kind of. It's the same thing as soy sauce, the intestines of fish contain protease which breaks down protein in the flesh into amino acids. One of those amino acids is glutamic acid. MSG is a sodium salt of glutamic acid(salts are when you combine an acid with a base, generally produces water and a salt)

If anyone wants to try fish sauce, it's available in Asian markets. Filipinos call it "patis". It's added to a lot of soups. It's not disgusting at all... it's like an alternative to salt.

I'm guessing this channels main audience is in the US. Eating intestines isn't very common there and letting meat out for months is a very unorthodox way to prepare it there. Combining the two is a recepy for weird, why are you surprised people find this weird?

Garum was used as a seasoning in whole recipes. Where we add a pinch of salt - or even McCormick's seasonings - in recipes they added say, a teaspoon of garum in their recipes. And they didn't only use the guts of the fish to make the garum, they also used the fish itself - cut up in chunks.

It's interesting that in Malay the word for salt is 'garam'. A fish sauce like garum is called budu Malaysia and other varieties are found throughout Southeast Asia.

It's still common in Asian cuisine, actually. Fish sauce or in Filipino (where I'm from) it's called patis. Same process, minus the herbs.
Yep, there's Thai, Vietnamese, Japanese versions, etc and is the ancestor of soy sauce. There's other similar sauces made from shrimp and even octopus. And it's still made in parts of Italy, under the name colatura.

Yeah it's really good, it's usually used to bring out the flavors in the dish. Like soy sauce, the taste is umami.
That recipe is called garum ,and here in Italy (Rome) you can still find it somewhere

fish sauce is very common in south east asian countries like Thailand and the Philippines. Almost the same procedure instead, they use whole fish, salt and no herbs for fermentation. Fish sauce is one of the best source of umami taste.

We still have a version of garum that's in common use: worchestershire sauce.
In several regions in the Philippines, we have a condiment/appetizer made from fish guts too but it's from smaller fish. The guts are cleaned. The insides are thrown away and washed with water first, then salt and finally with vinegar. You wash it with vinegar multiple times. After you squeeze all the vinegar out of the guts, add salt, vinegar, ginger and other spices (I forgot the other things my grandma put in the mix). The dayok, that's what it's called, is then placed in a glass container and allowed to ferment for a few days before it can be consumed.
I've never eaten the intestine part but I did used the liquid as dipping sauce several times. People often squeeze kalamansi and/or add vinegar if the dayok is too salty.
I have fish sauce in my fridge. I've never made it myself, but I imagine it is very similar to this.

Something similar is still popular in South Korea, today. It is a hot salty fermented fish gut. It is not even a novelty food, you can easily buy one. I used to eat it when I was a kid... but now I know a lot more about parasites and bacteria, I do not want to eat them anymore.
it is like plaa raa "ปลาร้า" in notheast of thailand but instead of sardine we use whole body of freshwater fish for fermentation

Southeast Asian countries have something similar called 'Fish Sauce' that is basically whole fish that is salted and fermented in barrels. Smells like hell, tastes like heaven.

Noma has a lot of modern takes on garum that are incredible. This video was a caricature of how garum was made. Fish sauce is still used around the world and is indeed very tasty despite the funk.
Worcestershire sauce, besides seasonings, is basically a fermented sardine sauce.

What a closed-minded creator of this video. Modern day versions, created nearly the exact same way, can be addictingly delicious. Don't knock what you don't know anything about, obviously the Romans knew there was something to it.

Philippines, mostly on the northern island, has exactly the same condiment. And we really love it. We treasure it so much, it's one of the most safely stored "property" to whether the 20 typhoons the country gets every year. IT IS disgusting, but the flavor that is a gustatory version of how awful noises harmonize into a divine piece of music makes it a delicacy worthy of protection, and "preservation". Salty seas surrounding the country means cheap salt, and plentiful fish.

When I was in Vietnam I drove through the area where they ferment the fish sauce. Smelled disgusting, but tasted delicious.
Rotten and fermented stuff makes the best condiments, just take a look at how soy sauce and worcestershire are made as well.

Garum, more or less, seems similar to the fish sauce almost ubiquitous to Vietnamese cuisine. I like it but many Americans I know do find it difficult to handle.
