The secret to the cast iron skillet is to never use soap on it, keep it greased with oil in between using it, and use plenty of oil/fat when using it :) Oh, and lowering the temperature when using it, after it's heated through, it'll keep the heat for a long time :) Hope it helps?
My mom didn't really use cook books, she was just taught by her mom the family recipes that have been passed down. Same with me, but i still used cookbooks lol
This video got me craving hash browns :D So I just made some in my cast iron pan and didn't have any problem whatsoever. I always preheat the pan on high heat and when it's hot, I'll turn it down to medium (or even medium-low when I have the feeling that it's getting too hot) and then put in the potatoes. They didn't stick at all and were suuuuper crispy. I have to add that I par-cook the potato shreds in the microwave for a minute or two, so they'll stick together better and put them straight up in the pan, no flour, no eggs.. This starchy goodness crisps up pretty quickly, so this might help with them not sticking.
Whenever I make the grated hash browns with a cast iron skillet, I put the grated potato and all of the seasonings in a bowl with canola oil and mix it up that way first then fry it as well as melting butter in the skillet. Lots of non-stick stuff and I've never had it stick!

My cast iron frying pan has been use a lot and has a great surface from years of seasoning. I don't have any trouble with sticking. I occasionally season it by baking in the oven with a coating of solid fat and then I wipe it out. I clean it myself and use coarse kosher salt to clean it.

It is a bit tricky with a cast iron skillet but the plain and simple trick is butter the pan and i mean BUTTER that pan, usually 2 to 3 spoon glop of butter does the trick, lower mid heat you want the butter to melt in a slow rate nothing quicker then a couple seconds and nothing slower then 5 seconds, you don't need to time it just use your best inner count down. Spoon drop the potato hash once your whole bottom pan is covered in a thin layer of melted butter and slowly inch the dial up to about half way more then low mid heat. You don't want to inch it to mid heat you will burn it for sure unless you are fast enough. Either way take some water and pour a little on the hash and cover the skillet, I use one of my pot's cover that fits just inside the skillet and lower it back down, sounds weird,But trick here is to let the butter penetrate and slowly cook the hash but not burn it but letting the residue heat to slowly eventually steam up the water in the hash letting it remain moist but not raw, all after a few minute roughly 4 to 7min (doesn't have to be all even numbers no OCD here) uncover and let it cook the rest of the way, the fat in the butter will sponge out and fry your hash, lift every now and then with a spatula and check you want a very light brown to golden before you flip :) repeat it all minus the water and cover. Just keep the heat low on a skillet lets you cook well.
I use a little bacon grease and salt in a heated cast iron pan. when I flip I'll add a small pat of butter and a little more salt. thanks great gramma for the salt trick: )
This is the first time I've successfully made crispy hashbrowns! - For a cast iron pan, make sure its well seasoned (even eggs wont stick to mine). I cooked bacon in it and used the grease to fry up the hash browns. Use medium heat (4.5/10) and don't stir for about 5 mins at a time. - All the water must be squeezed out! Getting my husband to help ensured amazing crispiness :) I've always hated potatoes because of their mushiness, but now I can foresee myself enjoying many crispy potato breakfasts in the future! I use a cast iron for my hash browns and fried potatoes. The only way I can keep them from burning is to make sure my oil doesn't cook out until the very last minute. Once the oil cooks out they get cripsy. It is definitely a labor of love
I think the most common cause for food sticking and/or burning in cast iron is not giving the pan enough time to level out in temperature. If you start cooking too soon, there could be cold spots, and the overall temperature could still climb as you cook. So set it to temp, and let it heat up for a good few minutes to make sure that it is evenly heated throughout and won't heat any further. A rule of thumb is that it's ready when you can smell it. Also, make sure to add the oil right before the food.

for cast iron when drying it you have to put it on the stove with a low flame and then wipe it with a Lil cooking oil and let it set for a day so the oils can just set then repeat again and you should be good to go. its an old Mexican thing.
Cast Iron Tip: I was always taught that when cooking with cast iron to never turn your stove top above the medium setting. Think of the medium setting as the high setting and never go above that. Those pancakes are awesome. These is also these potato balls that have been a long time Hispanic Fast food favorite called stuffed potato. It is a mashed potato balled filled with seasoned hamburger meat then deep fried. Not the healthiest thing in the world but so delicious.
I love the idea of the mashed potato pancakes but - I never have mashed potato leftovers I love it too much :D I'll have to make a double batch next time :D
Its not about how you cook them necessarily its more about your care for your cast iron. You are never supposed to wash it with soap or rinse it with water you are to take salt and a paper towel and wipe it down. Personally if it still sticks after that i use a method i figured out to keep things from ever sticking and that using two types of lubricants while cooking i prefer olive oil or canola oil paired with butter because the butter gives it extra flavor without being redundant as well as not over oiling it and tasting nasty. Also try a lower heat than normal because cast iron conducts heat more efficiently so you don't have to use as high of heat to make it as hot. I swear by this and let me know how it works for you or if you need any advice.
with the cast iron skillet, just keep your heat on medium and use some olive oil with the butter as well. My favorite way is with bacon fat and onions, minced garlic, cumin, turmeric, pepper, and you salt to taste on the plate.
Hello, Like a Wok a Cast Iron Skillet has to be seasoned before it is used and not washed in soapy water as that means it needs seasoning again before use. After that you have to get it to the correct temperature and add the mixture when it is settled at the correct temperature. This is because it holds the heat and takes to long to cool if you turn the gas down. These were designed to be used on open fires and Ranges s long and slow cooking. I have about 6 Copco Frying Pan and Sauce Pans, Here in the U.K they used to send 1 container a year, The Frying Pan was a gift asked for 20 years ago, I bought the lid myself, It cost me over £30, At that time it would have been equivalent to USA $60 and I had to wait 18 months LOL
We only ever use cast iron. I don't really know that i do anything special to make sure they don't burn and stick. But you do need to make sure you have a really well seasoned pan- as in you let it sit overnight with a good helping of oil all over the inside of it. We usually do several at a time and leave them in our oven overnight. If your food is sticking in your cast iron pan that's a good sign you need to season it.
For the hash brown, if you want to use iron skillet, place an old non-stick skillet (frequently used),which you are about to garbage. put a old skillet under the iron one. this way your iron skillet is not in direct contact with heat n it turns out much more crisp. this is the best way to use your old skillets. For the leftover crisp baby potatoes, throw it in a tomato based soup in place of crutons n it tastes yumm. ... Give it a try...

Also try a lower heat than normal because cast iron conducts heat more efficiently so you don't have to use as high of heat to make it as hot. I swear by this and let me know how it works for you or if you need any advice.
That makes sense. I made them one time with butter AND oil with no problem, next time with just oil and it was sticking and I couldn't figure out why!
with the cast iron skillet, just keep your heat on medium and use some olive oil with the butter as well. My favorite way is with bacon fat and onions, minced garlic, cumin, turmeric, pepper, and you salt to taste on the plate.

Hello, Like a Wok a Cast Iron Skillet has to be seasoned before it is used and not washed in soapy water as that means it needs seasoning again before use. After that you have to get it to the correct temperature and add the mixture when it is settled at the correct temperature. This is because it holds the heat and takes to long to cool if you turn the gas down. These were designed to be used on open fires and Ranges s long and slow cooking. I have about 6 Copco Frying Pan and Sauce Pans, Here in the U.K they used to send 1 container a year, The Frying Pan was a gift asked for 20 years ago, I bought the lid myself, It cost me over £30, At that time it would have been equivalent to USA $60 and I had to wait 18 months LOL

We only ever use cast iron. I don't really know that i do anything special to make sure they don't burn and stick. But you do need to make sure you have a really well seasoned pan- as in you let it sit overnight with a good helping of oil all over the inside of it. We usually do several at a time and leave them in our oven overnight. If your food is sticking in your cast iron pan that's a good sign you need to season it.

For the hash brown, if you want to use iron skillet, place an old non-stick skillet (frequently used),which you are about to garbage.
put a old skillet under the iron one. this way your iron skillet is not in direct contact with heat n it turns out much more crisp. this is the best way to use your old skillets.
For the leftover crisp baby potatoes, throw it in a tomato based soup in place of crutons n it tastes yumm. ...
