    I was watching your ketorade video the other day and in it you and the wife discuss how lemons and limes are the same fruit. You say one is just ripened on the tree longer.
    So, I'm from Florida. I can tell you lemon trees are their own thing. The two look similar in size. Both originate from India but they each are their own distinct tree.

    I don't think sardines stink. You need to mind what they are packed in. you can find fresh ones overseas. Most sold in cans in the US are in some type of oil and some in a non oil based liquid.

    I love sardines, and I found it funny when you mentioned you need to head outside when you eat them because the lady thinks they smell bad. It's true. They do have a potent aroma, I get kicked out too, but the cat sure wants to make friends with me on my way out! i have since moved to eating a lot of sardines that are already in mustard, tomato sauce, or my fave, the jalapeno hot sardines! I never realized they were really that good for me, just always liked the flavor! Great vids, thanks Dr. Berry!

    I eat sardines, herring, tuna, (only yellowfin or skipjack due to their being lower in mercury) salmon, oysters, clams, cockles if I can get them, mussels, other bivalves, and sometimes the occasional crustaceans, lobster is solely smoked to make a compound butter with bacon, salt cured pastured egg yolks, like juice, salt, shallots, pepper, cayenne, minced fresh parsley, and grass fed butter.
    Crawfish and shrimp are nice!

    The problem with fish is that restaurants and sellers are sneaking in high mercury fish under lower species labels and I'll never know the difference.
    My local stores don't sell wild caught salmon. Every package says farm raised and food coloring added.
    I never order fish when I'm out. I stick to sardines at home where I force them down like medicine.

  • @CarbageMan

    Eat your wild salmon, with the skin! Canned sardines and boiled oysters (in water) are easy to buy and keep around, too.

    • @gunner5916
      @gunner5916 3 года назад

      How do you cook yours with the “skin on” method? Thx!

    • @CarbageMan
      @CarbageMan 3 года назад +2

      @@gunner5916 If you want crispy skin, cut a cross-hatch pattern, about an inch apart, into the skin and let the salmon filet sit in the refrigerator marinating, skin up, in the refrigerator for at least an hour, after dabbing the skin off with a paper towel. This will remove the moisture from the skin so that it crisps up if you fry it in a pan.
      I fry it in avocado oil (a tablespoon or two in a small pan) with the skin down until the salmon appears cooked about 1/3 through (you can see the shade change to a whiter color.) Then I flip it to finish the other side and douse the skin side, which is now up with some of the oil to keep it crispy as the other side cooks.
      I like to make a dijonnaise dressing to put on it. I use about a tablespoon of avocado mayo and about a teaspoon of dijon mustard. I add a teaspoon of lemon juice and a teaspoon of water, then season to taste, with salt, pepper, onion powder, garlic powder and stevia (just a drop or two.) A dash of cayenne pepper livens it up too, or dill (maybe 1/4 tsp)-in fact, if you use dill, you can brine it in salt, pepper, onion powder, garlic powder and dill. I like to douse my fish with a little mesquite liquid smoke before brining, after dabbing off excess moisture.
      Hope that all made sense. I adapted that from crispy fried salmon videos I saw, and also another video by Sam the Cooking Guy-Salmon with Garlic Butter Sauce. It's a good video, but doesn't have the advice about the skin (and the recipe is different but tastes similar-I adapted it to make at lunch without spending the whole hour cooking.)

    • @CarbageMan
      @CarbageMan 3 года назад +1

      @@gunner5916 BTW, you'll need a sharp knife to cut that skin, and it won't cut easily if you dry it out before you cut it! You want to cut it when it's moist. Cutting it keeps the skin from tightening up around the edges and creating a surface that won't fully cook. You really need to have enough oil to make this work (some use extra virgin olive oil, and I've used each), and the skin really needs to be dry (or it will stick and make a mess.)
      Oh, and I like to plate it on riced cauliflower. Asparagus goes well with it, too, if you're missing another food for that meal. Since you're probably keto, you can pour the oil over top of the salmon before adding any sauce. It's a healthy oil, right?

    Question: my mom’s been on Keto religiously for about 8 months now and her recent blood work came back amazing, EXCEPT for her ALT. Her weight has stabilized and she is no longer losing weight( she’s a healthy weight now for a few months now). It suddenly shot up from a normal level us to a high level, around 45 or 50, and her doctor wants her to stop Keto bc they think Keto might be actually giving her fatty liver disease. Is elevated ALTs after being on Keto for a while normal? And if so, how does she get it back down to normal?
    Thanks Dr. Berry, have a great new year!
