    VALENCIA, SPAIN - Welcome to Valencia, in Southern Spain and home to Paella Valenciana, the original and authentic paella and probably one of the most famous of all Spanish food. Today we’re going on a paella tour in Valencia where we’ll first visit the market to see the local ingredients, and then eat two very different but authentic paella in Valencia. Let’s get started!

    Mercado Central - To begin this amazing Spanish food day in Valencia we first walked around Mercado Central, the central market and one of the most beautiful markets in Europe. The market has everything you could ever want. Along with trying a few snacks like a Valencian farton, we checked out all the 10 most common ingredients that are a part of a Valencian paella.
    Barraca Toni Montoliu (goo.gl/maps/bLTv4QmpGmqddVDBA) - Next up we headed out to Barraca Toni Montoliu, a man who is preserving the tradition of family paella on his farm just outside of the city. He grows most of his own ingredients and prepared a huge pan of paella using fresh ingredients. Seeing the process was a huge learning experience for me and it was fantastic. The paella at Barraca Toni Montoliu is traditional and family style.
    Casa Carmela (goo.gl/maps/RKPXnLcMcoaLHoUaA) - Next we drove over to Casa Carmela, a paella restaurant in Valencia since 1922, one of the oldest and most legendary. Their paella kitchen is absolutely insane, so many pans of paella cooking at once, all blazing over orange wood fire. They have taken Spanish food to the next level with their Valencian paella and are well known for their Socarrat - crispy caramelized rice at the bottom of the paella. It was for sure the best paella I’ve ever had in my life, hands down. We also tried their Fideuà - seafood noodles from Valencia.

    It was an amazing day learning about traditional Paella Valenciana and the pride and care that goes into it. Again it’s easily the most recognized Spanish food and after learning about it today, I can fully agree.

    Mark, as a spaniard, I'm extremely surprised by the quality of your tour. It's the first time that I saw a foreinger foodie that actually shows the amazing and rich cuisine that you can find in any corner of the country. You had an amazing guidance, you really went to some of the best "temples" in the country, like D'Berto, El Capricho or Etxebarri. You really shown the level of our product, amazing meats and fish, and one of the best seafood in the world. Also, a deep and old tradition that enrich every dish. So, I humbly thank you for that.

      Mark is really doing a great job . think the big problem is understanding Spanish food to even order it. Like the pinchos episode I’m dying to try the olive,pepper,anchovie pinchos. Although I like all these foods individually just would never chosen that. Now I’ll be dragging family around demanding we find somewhere that sells it 😂
      The steak and seafood in Spain is just to die for.
      You get home and think what is this slop I’m getting here 😂

    What makes Spanish food so different yet simple is that there is a huge emphasis on the quality and taste of the ingredients. Good quality food does not require a ton of seasoning.

      Because they use fresh ingredients that get alot of Light from sun and nutrients from the environment and plus they often use local produce that is organic and grown in near by land. Also the Spanish traditions, lifestyle and culture that influences the food and way they eat.

      @@Lmuas not really, paella is a bit different to cook. A bit of wind, the flame not hitting the pan can affect the timing. Thats just one of hundreds of things can go wrong with paella

      Exactly true what you just said, you can have the best ingredients given to 2 chefs, yet both produce completely different dishes, because the main thing you need whilst cooking is a passion and love for what your doing.

    As a Valencian living in Bangkok, i struggle to explain the essence of the true paella, as a dish and as an experience. I am thrilled by the good choices you made with the locations and you are very well informed about our tradition.       I love the traditional paella...I have a friend here in the USA from Valencia and she cooks it amazingly...The flavor is so distinctive from all other paellas I have tried...It is hard to match this flavor, and even harder to make it as a Valencian can...

Este video me llena de orgullo, de ver que no solo a mi me impresiona cada vez las maravillas de la huerta valenciana, y el respeto que sienten los valencianos por sus tradiciones, y su arte culinario.       He knows the spicy food of the US Southwest and of Thailand but he also understands the more bland food of the American Midwest and Northeast and Cantonese food. He has also traveled all over the world so he understands the cultural differences of food

      I personally don't consider food without spicy hot taste bland. Bland food is no flavor at all.
      It's a shame to not be able to eat food without it being spicy hot you would be limiting yourself.

      Unfortunately not if you are an unemployed person, as Spain has one of the highest unemployment rates in Europe if not the highest in the EU. On top of that, salaries are not that high if compared to countries such as Norway, Sweden, Denmark, Germany, Austria, Belgium, GB, France, The Netherlands, Luxembourg, Italy, Switzerland, etc. Although they are higher than in Poland, Czech Republic, Malta, Slovenia, Slovakia, the Baltic Republics, Greece, Portugal, Rumanía, etc.
      Productivity is low as in GB, hence salariés are lower that could be. Additionally, the rescue of private banks after the 2008's financial meltdown capped salary growth and consumption as huge amount of funds were allocated to the rescue of banks (i.e Popular, etc) and regional saving banks (i.e Bankia, etc).
      Having said that the country is amazing if you are a foodie, a tourist, a culture vulture or any other species roaming on earth. Spain should be in your bucket list.... Si o si.
      The quality of life index of Spain is 13 out of 36 in Europe in 2022, whereas countries as the UK ranks 17, Germany 6, Netherlands 3, lreland 20 and France 19. The full list is shown at www.numbeo.com, and other websites.

      How many countries did you actually visit to claim something this brave. Spain is literally one of the worst countries in Europe in terms of quality of life. Nordic countries, Iceland, Denmark, Norway, Sweden & Finland are at the top without any competition, followed by central European countries, Germany, Austria, Czech Republic, Poland. While I agree that Spain might have a rich history and some unique national dishes (like any other country in Europe), that's pretty much it. Wouldn't want live there God save...

    I am a South African and we Indians also make paella here, however excluding the rabbit and snails in the dish. I never knew that the pronunciation of the word is "pa eya" with the double L being silent instead of "pie ella."
    Oh well, you learn something new daily hey.
    I simply love the way Mark explains the tastes, smells, flavours and shows us how it's cooked and the locations also. The main thing I love as well is that we get to go for breakfast, lunch, supper and inbetween snacks anywhere and everywhere around the world whilst sitting comfortably in our own homes.

    I literally made Spain my first overseas voyage when I was a teen little backpacker. I went solely ust for experiencing paella and Salvatore Dali. Hahah...this brings back great memories of the foods of Spain..and markets...ong the best simple delightful dishes.

    I still have a photo on my wall of a Paella I had in Spain in a restaurant on the beach. The Paella dish took an hour to cook in a 6ft pan, and if I recall OK 6 boxes of rice and 2 large bottles of oil. A brilliant experience to watch it being cooked and then eat it when ready. Your tour brings back very happy memories.

    Not in Madrid, not in Galicia, not in Barcelona, not in Japan (sushi paella) but in Valencia!!!
    Finally someone promoting and reviewing the real paella. Dont ask Chef Gordon Ramsay how to make it, or any other chef who just add more distortion to this unique dish. These chefs got no idea, they dare to do false advertisement and risk their reputations. You going to love paella Mark!!!

    I'm 1/2 indian, the soccarat reminded me of when we eat Biryani, we also love to scrape and eat the crusty crunchy part at the bottom of the pot. Best part 🤤

    I'm from Zimbabwe and visited Valencia in 2015 with my husband as newlyweds. The paella was spectacular! We also got addicted to the orange juice from that region. Not like any oranges I have tasted in my travels

      I agree about the oranges in Spain in any of the regions that have them...I tried the ones in Palma de Mallorca...I got a full sack of them and I ate them for a whole month every day...My skin turned like that of a baby...So soft...And the sweetness was like pure sugar...I am from Spain and have family there...

    Beautiful country I love the view traveling to the farm look at those tomatoes large and ripe the snack beer and rosemary Love The rice fields I am paying attention to the preparation of the dish my first time all the ingredients rabbit and duck and green beans tomatoes snails water And rice and rosemary what a wonderful and delicious dish the color is amazing 😍 Mark you always give us the best from the way you and all the others ate tells me you all enjoyed the food Beautiful beach from where the had lunch 😊 Iove the kitchen so many pans on together great chefs job well done years of experience Spain here I come smile Noodles with prawns.

    Grew up making Paella all the time instinctively, and never realized i was making it until a Spainard in NYC told me I was making it. I never used snails In mine. The 2nd version in this video is how I made mine.

    We have been twice at Tony Montoliu's restaurant while visiting Valencia. The best paella in Spain.

    if you are still in the valencia area, you must go to "asador el pastoret" a restaurant in náquera, a small village 25km north of valencia, where they make the famous valencian "esmorzaret" (copious amounts of food that you usually eat at weekends between breakfast and lunch)

    I absolutely LOVE Spain. It is my hope to retire there when the time comes or sooner if I can swing it. As for the Paella you are correct I have never had Paella as good as I had there.

      Been able to visit a couple of times and I truly recommend it, the food is amazing, the weather is great and honestly the people are probably the best part. The night life is truly on another level, they really know how to party. Moving there next year for work and honestly I cant wait.

    Im portuguese never had paella in my whole life, i thought paella was made with scrambled eggs and sausage, oh ignorant me... looks good.
