I immediately googled it! “Calf stomachs are ground and then soaked in an enzyme extraction solution,” which makes the end products not vegetarian by most standards. While all cheeses labeled Parmigiano-Reggiano definitely contain animal-derived rennet, Parmesan can go either way.

Parmigiano Reggiano actually isn’t due to using rennet in the production process. Rennet is usually taken from the fourth stomach of a relatively young grazing animal like calves, goats, or lambs. So because of that it’s not considered vegetarian

Yup it's horrible stuff...the lining of a calf's stomach 😢😢 the vegan options are just as flavorful, no one needs to be eating a calf's stomach 😢
