Jambalaya 12 quart dutch oven 16 boneless/skinless chicken thighs (or what ever chicken pieces you would like) 3 pounds pork roast or pork tenderloin 2 pounds pork sausage 1 pound andouille sausage (if you don't like the heat leave out and add another pound to regular pork sausage) 2 tablespoons olive oil 2 medium onions diced 1 green bell pepper diced 3 stalks celery diced 64 oz chicken stock 4 cups long grain rice 1 teaspoon + 2 teaspoon Cajun seasoning (I use Tony Chacheres) 2 teaspoon + 2 teaspoon Worcestershire sauce 1 teaspoon + 3 teaspoons garlic powder 1 teaspoon + 3 teaspoons onion powder 1 teaspoon oregano Heat Dutch oven on medium high heat. Cut up all meat into bite size pieces. Cook pork in dutch oven first for about 15 to 20 minutes, add chicken to the pork. Season with 1 teaspoon Cajun seasoning, 2 teaspoons Worcestershire sauce, 1 teaspoon garlic powder and 1 teaspoon onion powder. Allow chicken to cook with the pork for another 15 to 20 minutes. Remove from Dutch oven and set aside. Add sausage and allow to cook for 15 to 20 minutes. Remove sausage and set aside Turn heat down to medium low and add vegetables to the dutch oven and cook for 45 minutes Heat oven to 350 degrees F Once you have your veggies cooked down you then want to add your chicken stock and your remaining Cajun seasoning, garlic powder, onion powder, Worcestershire sauce and oregano. Add your pork, chicken and sausage back to pot and bring to rolling boil. Add Rice and bring back to rolling boil. Cover and cook in oven for 1 1/2 hours. Remove from oven and let sit for 10 minutes before removing lid. Enjoy!!! This recipe can also be cut in half, if you do this do keep the vegetable amount the same.

Thank you for recipe, VERY GOOD. My crew loves it. Did my twist of it . Did meat sausages "substitute pork for per cooked shrimp" . Semi tenderized veg & seasoning in skillet . then added all meat & veg. to Instant Pot with broth. Set on "meat/stew 30 mins" Then added cooked shrimp. Got the heated up to good boil added rice covered for 10 mins.

I didn't add any extra salt and glad I didn't.. the rice came out excellent! cooked to perfection. i used Tony Chacheres Creole seasoning.. my oh my how tasty!!! but i think i'll have to find a creole seasoning recipe and make my own with less salt.. the jambalaya was so good with just the right heat! thank you so much. by the way even my wife liked it!!

Hey Melissa...I do a Keto friendly version using riced cauliflower. I brown up some chicken and sausage, the trinity, and then add in the cauliflower. I use a lot of the same seasoning that you're using here. It's a quick cook but very delicious. I use the riced cauliflower to make chicken or pork fried rice too. Both are delicious.
My chef hubby watched with me. He said, that looks very flavorful. That looks good. We will be having Jambalaya! Thanks Melissa! 😋. Do you notice a taste difference in cast iron cooking vs other pan taste. I remember a big difference from back in the late 60's after weekend visits to my grandmother in the country cast iron cooking on a wood stove or I developed a taste bud blockage. When hubby and I lived in Virginia the hurricane knocked off the electricity. Hubby had enough sense to Dutch oven cook our one pot meals in the fireplace right in the living room. Otherwise our kids would have lived on peanut butter sandwiches each meal for days. (Sorry I got off track. I am Long-winded) My grandmother would pop buttery popcorn in the cast iron. Was the best! I miss those childhood taste from my sweet Granny. Like her Tea Cakes with a hard or soft consistency. The dark molasses syrup bread cake. Buttery cornbread cooked on top of the stove in a cast iron skillet finished off in the over. The Dutch oven Mac and cheese with that old fashioned extra sharp cheddar cheese. I called it constipation block, lol! It was so good. I guess I just had a wonderful flashback triggered by the cast iron Dutch oven. Amazing how going down memory lane produces a great big smile🤗.

Jambalaya
