      Hey Jaz! Thanks for watching! The 30% ratio comes from some older guys that been cooking jambalaya for a long time. It comes out meaty.

    what meat can be cooked down to get the grease if you can't get your hands on hog lard? I find when i just use bacon i can't make enough grease to fry the meat. I thought about buying fresh green onion or cajun sausage out of the casing to make grease. What you think?

      You probably need about 3lbs of bacon to get the grease you need. The only thing it would probably be a little pricey

      @@bradsimon5846 You think 3lbs. of bacon would be good for 15lbs of meat? (5 ea. chicken, pork, sausage)

      @@jodydinger6545 yep! After you fry your bacon down fry your sausage down first and that'll give you a little more grease to fry your meat down
