No it is not. This cookie cutter nonsense is meant to make the dough prep as efficient as possible. A real pizza place would get dough prep done 6 hours ahead of lunch. Not 12 hours before so they can lazy ass the dough in the fridge all night. The all night "slow fermentation" is a joke. Yeast does not consume sugar when it is kept cold. So all a "cold ferment" does, is stop the fermenting process until the next morning when you warm it back up. Every so called "pizza guy" who starts with this "slow cold rise" bullshit, is a shortcut taking fuckpotato trying to sell a gawd damn lie to you. It does not make the dough better to put it in the fridge over night. It makes it EASIER. Man I hate stupid people.

He's absolutely right. Trattoria pizzerias in Rome are ubiquitous! And even though the pizza is inexpensive it is sick high quality. The other thing I loved about pizza in Rome is that is was mostly square sheets and they cut you off a square and served it wrapped in a sheet of paper. DELICIOUS 😋!

This is my second favorite type of pizza, and its crazy that the closest we get is the prefrozen, mushy thin crust options at major chains. There are so many chain alternatives that specialize in thicker crusts, but outside of major areas there is nothing for thinner crust.
That wire rack thing is a good tip. That might be what's missing from my homemade pizzas to firm up the crust. I mean aside from the giant pizza oven, the fancy toppings, yeah, actually I still have a lot to learn.

The thing I like most about pizza in Italy is that the pizza isn't covered in cheap cheese, and if there's any cheese on there it's high quality parmesan.
There's two styles of roman pizza which i'm aware of. The thin crust like this and the thicker, fluffier crusted ones cut into squares and sold by weight.

genius with the rack for the bottoms... too many times i get a take and bake pizza and the bottom is not crispy due to steam. what i have been doing to fix this issue is the same type of thing with my grill grate
yeah, this style is the most common in Northern Europe. Beyond a few artisan places that serve hipster Napolitana this is what you'll be eating. Not as high a quality as this. I also forgot that we have Pizza hut. Thats about the diversity in pizza in the North, haha!
