As an emergency class of starship, the Inquiry Class makes sense. Rapid construction and modularity is very important to keep in mind when the possibility of a war is very high. But even after a war, these modular ships could easily be given Science modules

So with this class, I like to imagine that we never truly saw as many as we did on screen. Rather, what few of the class they had were equipped with advanced holo-emitters by order of Riker himself. Famous for his poker skills and calling bluffs, he did just the same by having the handful of ships project multiple more that were beyond the Romulan's level of technology to detect that they were indeed holograms. It makes for an interesting and very typical Riker moment.

Of course the Inquiry class is a "copy and paste version". If your major shipyards have been destroyed but you need a fleet then you systematize with what you have got, to ramp up and fulfil production. As Henry Ford says, "Any colour - so long as it is black". It will also be designed as a ship that can easily, 'en mass', be upgraded so we can expect the ship to be around, and in variants to the core design, for a long time.

Starfleet needs ships like the Sovereign, Defiant, and Inquiry just as much as glass cannon ships like the Galaxy, and every other science focused ship in the fleet. The Federation doesn't like to talk about it but space is dark and dangerous, full of terrors waiting to be discovered. Starfleet needs to be able confront it with purpose built battleships. A deterrent against the darkness, and better if never used for its purpose.

Heck, it isn't even the best if you narrow it down to just "Riker saves the day" moments. It wasn't even the best RIker saves the day moment FROM THAT CALENDAR YEAR. Lower Decks gets that honor.
Honestly, at least in terms of my personal favorite, which is of course purely subjective, it's hard to top the arrival of the Klingons in "Sacrifice of Angels" on DS9 as the pinnacle of "The Cavalry Arives" moments in Trek, but that's a whole other topic.

Although you did a great job with the presentation as usual and it's a nice enough looking ship... I just don't buy it. There are 3 aspects to producing anything and you can only ever have 2 of those things... you can make it inexpensive, you can make it good, you can make it fast. Inexpensive x good = slow. Good x quick = expensive. Quick x inexpensive = poor. Sorry for my poor wording but this is 4AM for me. Again, no insult to your work here. Also, Starfleet doctrine would never allow themselves to put all their eggs in one basket. They may discover in 5 years' time that after extended usage the nacelles are tearing away from the hull at warp with no way to fix it. That feels like an in-universe / cannon possibility.
