I'm thinking this might be one of the inspiration behind the dish called callaloo in Trinidad and Tobago and Barbados and Grenada, but which uses taro leaves instead of amaranth - spinach, and which also adds pumpkin and coconut milk, and the meats used are mostly pigtail or crabs. It's not eaten as a soup though but as a topping for rice or root vegetables or baked macaroni and cheese or coocoo a cornmeal dish like polenta.
