This lady always gives great recipes and clearly gives ingredients. Love her dishes.
I recently bought a couple of Nicky’s books, and chose this as my first attempt at her recipes. I used the slow cooker rather than the oven. Absolutely wonderful recipe. The dish is full of superb flavours and textures, with a sauce which is utterly delicious.
Thanks, Nicky. Can’t wait to try more.
Just made this tonight. This might be the best stew I’ve ever had! Absolutely delicious.
It’s been a difficult Winter/Spring that has included two heart stents; a right hip replacement; missing Christmas because of the Corona Virus; then upon release from hospital being rammed by a driver who ran a red light at 60 miles an hour while texting on her cell phone which resulted in my neck being broken and a bruised heart muscle. I discovered your amazing video/recipe on my iPad while in hospital and have made it several times upon my release. Today is the fourth time. This Scottish Beef Stew is my favorite of all beef stew recipes. It is a mighty prescriptive for broken necks, Corona Virus, heart surgery, having been skipped over by Santa, and it will also probably prevent abduction by space aliens. Seriously, this is a wonderful recipe. I couldn’t find a Swede so I tossed in a Norwegian, no, I’m sorry, I meant to say a turnip. It turned out great! I also ran out of currant jelly so I used Kentucky Mayhaw jam. That worked also. Thank you for your excellent recipes.
I follow you and I can’t believe I’ve only just seen this recipe. I had visitors the day after I made it. Omg it was amazing. Some nice touches in that. They couldn’t get over how luscious it was and said it was the best they’d ever tasted. I noticed reading some of the comments that some say it’s not Scottish. It’s a recognised fact that there are as many “original” recipes in all the counties, as well as England, Wales and Scotland as there are families and grannies. And tempers can flare over the different methods, ingredients and even names of dishes. It’s your dish. It’s delicious. Keep up the good work. That is one amazing Scottish Welsh English stews. Well done
My one disagreement is that wine probably wasn't all that common in any but the richest Scottish (or English!) households until the 20th century (and certainly not for cooking!). A good dark ale would be much more traditional and just as good. In fact I just watched a good English Heritage video on a medieval stew that added a good handful of barley.
I cooked this meal for my family last night and what a fab meal it was. Great for a autumn evening meal.
Moved abroad 2& half years ago and get a bit homesick, but watching (and making your dishes) helps me cope. I'm a retired gas engineer /plumber not by choice..now a full-time stay at home dad..love your videos.
I just cooked this exactly as you said and it’s the best beef stew I’ve ever had, will be doing this often. Thanks
Amazing. This dish actually looks like your thumbnail. The recipe is easy to follow and the video is short. I really appreciate this. Going to remember this. Thank you.
& Thank you for the à nice simple Scottish recipe. I’m going to make a steak and Stilton pie my skillet tonight.
Sharing some ideas: Ale/stout can be a great substitute instead of wine. I’d skip the stock to save time if I need to. I like to marinate the beef with Worcestershire. And add cheese to this dish too occasionally.
Cheers mates, bon appetite

Left over red wine sitting on a shelf???????? Checked EVERY shelf in our house, absolutely no left over wine to be found. Never even heard of 'left over wine' 😂😂 Using a bottle of Guinness as a substitute!!😂😂🇬🇧
Just checked and yep, I can confirm left over wine is not a real thing.
None here , but the wife is walking funny
Yeah, bizarre thing to say on a Scottish recipe. I honestly don't even know if it's safe to leave red wine over night once opened. A bottle of wine is a single serving, just like a bottle of whisky or 15 beers.
My house is the same where WINE is concerned 😂😂
I've made this three times now. My partner and I love it! I've tried many of your recipes now. They always turn out great! I'm a big fan. You make cooking fun and easy!
I am making this today. ❤ We have -5 and its snowing, perfect to have on a chilly day. ❤❤❤
Oh my god !!! Lying in bed, ready to turn in. Why did I just watch this ???
I m sooooo hungry all of a sudden
I made this tonight, but didn't have a swede on hand. I chucked in a bit of celery I needed to use up and used white wine as that's what I had open, but this was still very, very good. I think with the red wine and swede it was supposed to have, this would be magical. I now have swede on my list for tomorrow's shopping! Thank you for this recipe - even my fussy children ate it! It has lifted my beef stew game enormously. 😃😋🥰
Would have hated this as a kid. 40 years on I can’t think of anything better. 👏👏👏
Exactly
Being American, I had to look up 'Swede' to find out that it was what we call a rutabaga. And I used to work in a restaurant kitchen.
Yup! If your source didn't tell you, rutabagas, or as my Southern dad called them, "rutabagies", were an important staple in northern Europe--I know, obvious! I did a quick look-up, the Scottish "neeps" refers to rutabaga, or new turnip. My Wisconsin Scandihouvian mom always put rutabagies in her beef stew and pot roast, never served them as a solo veg. I'm pretty sure she also threw in parsnips at times. Isn't it grand to have such food exchanges?
Thanks, I was going to ask what it was.
Thanks. I has no idea what Swede was either!
We do like to confuse things in Scotland. The auld yins (Older folks) here call them 'neeps' which would hint at those being turnips but Swedes tend to be more commonplace in the shops nowadays so that's what I tend use.
They sell rutabagas here in the Deep South year round, pretty much. We love them. They also serve them at most of our local restaurants as a side dish. We don't typically eat white turnips in the south, only rutebagas. They are one of my favorite veggies.
This is the best stew I have ever tasted. I will make this again and again. Thank you.
Solid recipe (and great video). I recommend cooking half the meat at a time so that the pan is not crowded and it browns the meat nicely. It only takes an extra 8 minutes or so, but it's worth it.
Nicky,
This is making me drool. I will make this when feeling under-fed,
harassed, bored and miserable. Don’t fancy dull wholesome food(salad)
I want something a
little bit ”tasty”. Nothing wrong with
associating certain foods with pleasure!
I made this tonight, and it’s probably the best stew I’ve ever had. I was a little unsure about the addition of the cranberry sauce, but it was amazing!! This will definitely be something I cook monthly. Don’t skip the fresh thyme sprinkled on top, it really ties it all together.
My husband found out that he's mostly Scottish and has been learning Scottish Gaelic. I wanted to make him beef stew and when I searched this one popped up about 10 videos down and I was ecstatic! I am going to be making it for him and I couldnt be more excited!
Ha this must mean to the rest of us ....he's American ..
im Scottish living in Scotland and even i have no need to learn gaelic
This is pretty much how I always make beef stew, except I've never added cranberry sauce before. Had no idea it was Scottish. Next time I make it I'm definitely going to try it with the cranberry sauce. Cheers from 🇨🇦
What can I say but flippin fantastic. The meat was meltingly tender and succulent. This stew is designed for sharing. I made enough to choke a goat!
Great job!
I made this tonight and it was amazing!! The family really enjoyed it!!! Thanks for sharing!!
Just cooked this and it is remarkable. So easy to make, yet so tasty! Great dish!
Glad you liked it!!
I made this tonight. Wowowowow! i followed directions to the T, came out perfect. So delicious and comforting, my family ate it up like it crack. Sooooo good. i served it on top of your mashed potato recipe.
My family has been watching Outlanders on Netflix and wanted to eat like the Highlanders. This is a gem of a recipe! The cranberry jelly is subtle but key! A nice variation from other stews I've made - this is now my go to standard!
Just made this and it’s an easy 10!! Thank you! This is a once a week staple now. Superb.
Cooked it yesterday. Even better than I expected. The flavour of that sauce! You are now promoted to My Favourite Girl.
This looks lovely I love beef stew esp in this weather I like that it has the jelly in it and red wine bet it's delicious thank you x
Delicious! I recently did something similar using a shoulder of venison cooked for 4 hours on top of the wood burner, definitely going to follow this recipe though. Thank you 🙏
Made this yesterday minus the Swede. It truly is fabulous.
I asked a small Swede if I could peel and chop him but he did not care for the idea :(
@@bitmap1638 Scandinavians pah!
Making this right now! The sauce is amazing! We have 2 more hours to go before we can enjoy! Thank you for sharing!
Thank-you so much for mentioning both kelos and pounds and temp both F and C. It's not that we're too ignorant to figure it out, but its nice not to have to do that when trying to put it together without having to stop and calculate the measurements. Very well done, nice voice and love your accent!
This looks soooo good! Thank you for sharing the recipe!
Your going to love this my husband and I r living in Ireland he has beef featured on tv for his irish beef stew I'm making him this thanks
omg i made this last night 😋😋hubby had to many beers and crashed out lol😂😂he got up this morning and could smell it lol .he has had it for breaky 😋said its the best one he has ever had thankyou for sharing xxxx
That is awesome!
This is not like any stew I ate growing up in Scotland but that's a good thing! Meat cooked til it was dry, shrivelled and grey! It's only saving grace was I can now appreciate tasty meals like this.
Making this tomorrow. Looks fabulous. All of you haters can hate about the ingredients...I'll be the one with the warm and happy tummy.
I watched your video and used your recipe. The whole family said it was delicious. Thanks so much for sharing.
Will deffo try this soon. On your Asian ribs, chicken wings and special fried rice tonight and absolutely love all your recipes I've done so far.
❤🥇
Thanks so much. Let us know how you get on with the other recipe 👍😀
Just made this - wow it was sooooo good, love your recipes, simple and delicious every time ❤
Beautiful recipe. The type of cooking, the aromas and the spices make me think that it is an ancient recipe, strengths of the fifteenth century, similar to others of the same period such as Peposo alla Fornacina (Renaissance Italy). This stew closes the mouth of those who make easy sarcasm about Scottish cuisine ^ __ ^
Oh goodness that looks heavenly!
Your mom just wanted to get your dads attentions. The divorce was the same thing reversed. They didnt cheat on each other
It looks perfect - and with the seasonings you put in there it’s got to be perfect-tasting too! Well done! 😋
My mother used to use red lentils in her stew in place of flour and she’d cook it and let it sit overnight and finish it the next day. I wish I knew exactly how to recreate that it’s sooooo good in the winter
Oh wow thank you for this gorgeous recipe, i did it yesterday and it was so tasty. My family loved it and cannot wsit was me to do it again. I need to try some more of your recipes now 😀👏🏻👏🏻👏🏻👏🏻
Hi Nicky,
I went to your site... Really well laid out, easy to follow, clear and all questions answered. Easy to print the recipes...well done!
Thanks for the recipe. Definitely going to give it a go. keep those great recipes coming!
There was a Scottish restaurant next to the shop I worked at as a teenager. They invited us for a feast for the Boss's birthday once. I really liked the haggis! (My great grandmother was Scottish).
This is what we call Red Wine Casserole in Australia, but we also add parsnips .. great video thanks 🙏🏻
Made this today and… OMG, it’s wonderful. Thank you so much for this. Love it so much x 😋
Looks delicious. I’m definitely going to try it. Thanks
Best beef Stew ever ,we put bacon lardons in with the beef at the start and also add mushrooms and dumplings of cause. Great recipe absolutely love it , thanks for sharing ✌️
Mushrooms and bacon in a beef stew 😂
Cooked this today. Perfect. Beef fell apart in my mouth. Thanks!
Fabulous .I'll be making this for new year .🙂
Made this receipe yesterday and it was delicious. I'm glad I found your channel. New subscriber here. Thanks from 🇨🇦
this ones on my list !! super easy great instructions and easy to follow nice video....
Today I learned what a swede was. Am going to try this with my next beef stew.
Oh man, delicious!! I need to make this, I love stews. I like the pot you used.
I’ve made this a few times…. So good..my favorite stew also!
She's cute. And delicious stew 😋
Love this receip.
I enjoy your easy to follow style. Great for people who aren’t experts to try. After reading the negative comments I subscribed. I’ll add this one to some of your others to try once the temperature falls below 30 degrees C. Best wishes from Australia. 😀
Delicious. One of my favourite recipes xx
Made this today. It was very good
That looks delicious.
Looks delish! Thanks for sharing.
That looks a drop of good, and it will keep the cold out.
Awesome Nicky👍
So goooooood.
Thank You💞
me Nan (from Inverness) would be singing your praises if she was still with us, her version was alot more simplistic as me grandparents were not that well off, most of the veggies were grown in the back garden, loved her Stews and her Tatty Oggies, sure do miss those days.
I cook a similar stew overnight it’s called forgotten stew. Tastes better as reheated stew
Mmmm...it looks very delicious!!! 😋😋
It is very good.
Awesome recipe. Another fantastic Scottish beef is Belted Galloway.
Oooohhhh my mouth is watering!!!! I haven't had that (it seems like) forever!
Looks fantastic!! Can't wait to try it.
This was superb. But Scottish ? Red Wine ,Bay Leaves ,Garlic,Puree,Thyme ,W sauce .Ma auld maw never heard of any o them .
True Gordon, but 'Scottish' means something different now just like 'fusion' world foods. What would Burns say if he saw vegetarian haggis ?
@@southwoodside Iam not against progress,i embrace it.
Aye but people love to butcher traditional Scottish dishes. Love this recipe but it is certainly not Scottish. Scottish inspired though, maybe.
@@JSandwich13 not just Scottish dishes either, anything traditional is up for a bit of mutilation!
Scots to tight to buy any other ingreds😂
Wonder if I put less liquid in I could cook this in the slow cooker for more tender meat and saving on electricity..it looks amazing ❤
Don’t care about burns night, I want it NOW!😛
I can't wait to make this, thank you!
This would be nice served inside a large Yorkshire pudding.
I love the Girl, yes good on you because stew originally was Japanese but the recipe was giving to Scotland as a gift no idea why but interesting I thought 😊
Just made this. Absolutely delicious! Followed the recipe to the letter except I had no Worcestershire sauce (rookie error) so used marmite instead. Worked just fine.
That looks exquisite👍😋😋😋😋👌🥂
Looks delicious!!
lovley! I've been adding a spoon of mustard to mine for a kick. I'll give this a go tho mouths watering
4 BAY LEAVES!!! WOW that's a strong flavour
Looks awesome. As a Scotsman I'm not sure why it's called Scottish stew. I would just call it beef stew. I may well give this a go in the slow cooker though 😋
Yum, I want to try this. I'm not sure what's so Scottish about it, though, besides the Aberdeen beef. It just looks like a really good beef stew to me, very similar to what I've seen from other countries. The ranchers in my area in the US raise Black Angus cattle.
Your the best cook I have subscribe to I can’t believe how delicious your recipes are I am such a fan I now just look through your recipes and dinner tastes wonderful thankyou soooo much 😘
I’m on it! 👏 👏👏 thank you
Looks delicious!
Ode to a beef stew!
Looks good 👍
Wonderful as always.
Have you ever made a stew using ox heart and kidneys?
It's made in a similar way and is as delicious as this looks.
It's also relitively cheap and can be found in Morrisons.
I've got to admit, I'm a bit of a wuss when it comes to offal 😀, so haven't tried that one Juan.
Just close your eyes and pretend it's meat 😀
Morrisons also sell Pigs Cheeks, Nik you need try them if you haven't yet, slow cooked amazing
Winter time goodness.
Anything wtih cranberry sauce and neeps in it has to be good. :) Will definitely make this week.
Steam the beef, steam the veggies, add to 500ml gravy mix , simmer on hob 1 hour, add dumplings cook for further 1/2 hour, finally add 250ml pepper gravy, simmer for another 5-10 minutes jobs a good un 👍
