Is it just me or does fish that is caught and cooked look so much better that fish bought at stores Edit: last summer I was able to catch and cook Mahi-mahi off the coast of Costa Rica and I can confirm that it is indeed wayyyyyy better. Probably the best food I have ever had and I fucking love food. Makes me wanna become a fisherman.

Caught my sturgeon on the Columbus River in Oregon.. It was a 7 footer the guide had caught twice before me identified by an odd scar on its face. Definitely a once in a lifetime thing for a novice like myself .

Runoff from the vineyards and silt from the banks destroyed the fishery . 70 years ago, it was populated with large quantities of sturgeon... Massive abalone die offs along the coast here, supposedly from increased water temp killing the kelp

Spinal cord is a delicacy, used in Russia to make "pirogi". Most delicious thing ever. 0 need to fillet, as there are bones. A crime wasting so much of that meat. Cut across into rounds, about 1" thick. I _know_ my sturgeon, grew up on Volga, where it meets Caspian sea.

FYI: White sturgeons are not rare. In CA, they can only be legally kept if they are between 40”-60” only. Now however, green sturgeons are rare & endangered and may not be kept.

Don't eat too much of those...they double well as thermometers. ie, they are loaded with PCB and heavy metals. My mother has been studying Columbia River White Sturgeon for most of 30 years now, the toxin content of their flesh is pretty nuts. Unless you can find some in pristine waters...good luck!
Thanks for letting relive my diving and fishing experiences from growing up in northern California. It's amazing how you catch fish when no one else on the boat does. I call you the fish whisperer. I bet you have some scot irish ancestry with such good outdoor skills..lol!
Just a tip for cooking Sturgeon, if you're grilling or flash frying, its better to pre cook it in an oven for 20 minuted first. It really tenses up if you put it straight to a grill, better to slow cook it. Its actually perfect to eat raw as its such a refined flavour. Its lovely as sushimi with a bit of grated red onion and capers. My favourite way is marinated in red wine vinegar, poached with shallots, then finish fried with butter, thyme, and capers. Despite its dinosaur looks, its a delicate fish to eat bizarrely and tastes phenomenally good when cooked a bit more delicately rather than bold flavours. Im sure that marinade tasted great though! Id just pre cook it before grilling, and youll keep it nice and succulent/flakey, rather than meaty and dense.

My grandfather told me stories when I was little about the giant sturgeon as long as his boat that he used to catch in Ontario, Canada. Sturgeon Lake. In the area we call cottage country. Beautiful area in the summer.

You used to be able to catch Sturgeon in Lake Temescal up in the Oakland Hills before the fire in 91 they used the Lake as water supply for water bucket helicopters we watched on the news all these fish dropping down on the fire and the reports from residents and firefighters of the fish hitting cars and houses the fishing was never the same, tight lines

Conservation also means keeping the population in check. If the population isn’t kept in check then the species will suffer regardless.

Don't eat too much of those...they double well as thermometers. ie, they are loaded with PCB and heavy metals. My mother has been studying Columbia River White Sturgeon for most of 30 years now, the toxin content of their flesh is pretty nuts. Unless you can find some in pristine waters...good luck!

I caught one off Eckely pier by the carquinez bridge. Too small though had to let him go, I was actually using grass shrimp fishing for stiper.

Just a tip for cooking Sturgeon, if you're grilling or flash frying, its better to pre cook it in an oven for 20 minuted first. It really tenses up if you put it straight to a grill, better to slow cook it. Its actually perfect to eat raw as its such a refined flavour. Its lovely as sushimi with a bit of grated red onion and capers. My favourite way is marinated in red wine vinegar, poached with shallots, then finish fried with butter, thyme, and capers. Despite its dinosaur looks, its a delicate fish to eat bizarrely and tastes phenomenally good when cooked a bit more delicately rather than bold flavours. Im sure that marinade tasted great though! Id just pre cook it before grilling, and youll keep it nice and succulent/flakey, rather than meaty and dense.
You can’t keep anything in bc, but they get up to 20ft+ in the Fraser River....

@@Sshooter444 They take many years (11-34 years) to reach sexual maturity and are almost extinct in BC compared to historic levels. Taking any of them would be extremely detrimental to survival.

My grandfather told me stories when I was little about the giant sturgeon as long as his boat that he used to catch in Ontario, Canada. Sturgeon Lake. In the area we call cottage country. Beautiful area in the summer.

You used to be able to catch Sturgeon in Lake Temescal up in the Oakland Hills before the fire in 91 they used the Lake as water supply for water bucket helicopters we watched on the news all these fish dropping down on the fire and the reports from residents and firefighters of the fish hitting cars and houses the fishing was never the same, tight lines

actually its only some provinces in canada that it is protected in. not all. mostly ontario. and its not because they are considered prehistoric like u say its because they are endangered. their population in ontario waters is not healthy. thats why they are protected.
and technically they are 2 different species of sturgeon. he caught a white sturgeon we have lake sturgeon. different species. plus hes in the states not canada. they have different regulations then ours

wow! I grew up on a Caspian Sea(West Kazakhstan) eating Sturgeon and Caviar all my childhood. It tastes so good, firm and fatty. Miss those days.
