Ma'am, there's no way for her to know what's too sensitive for your teeth. Sugar is not like alcohol. It does not evaporate or lose its potency when you cook it. Think of candied Yams. The sugar melts and becomes incorporated into the potato. If you cook it too long, you'll just end up with bitter candy. I hope this helps.
It could be the type of brown sugar you used. The first time I made it, I used dark brown sugar and it was bitter because dark brown sugar has a more molasses flavor. Switching to a light brown sugar definitely was better
