She had the same cutter, but I don’t remember her having the rolling machine. I believe she hand rolled the dough. I’m trying to recall from almost 60 years ago and I’m sure some of my memory has faded. We just went shopping and wouldn’t you know I had to buy ravioli. Made by a local small business, so they actually are good. I’m positive yours are much better and when I am felling adventurous I will give them a try. Have a great evening.
This brings back fond memories of me and my grandmother. I was her oldest grandson so I always got spoiled with food. She would make me special dishes. On my birthday I would ask her for homemade cavatelli. She was sicilian so she pronounced it differently than you do. I would ask for this because I would always makeit with her. It was a special time just me and my grandmother making cavatelli. She rolled it with her thumb but I don't remember her having the board you used. She has been gone 18 years now but not a day goes by where I do not think of her. My favorite dish she made was chicken francese. Anyway, thanks for the stroll down memories lane

Instead of gravy my family always made broccoli and cavatelli with a garlic sauce.. My son and his wife are coming in from out of state and asked me to make it for them and I will surprise them with home made cavatelli. So glad I found your site. Can I make dough a day before or will it change the texture?
It's best to make it same day, but if you make it the day earlier, just be sure to tightly wrap it with plastic wrap and keep it in the fridge - the cavatelli should still be the same, although I've always made mine same day. I hope you have a great dinner with your son and daughter-in-law..... I'm sure they're going to love it 😊😊
Ivo. I.m going to try to make cavatelli with a purchased pasta board. Do i really need to work the dough for 5 to 10 minutes? My hands and back may not except that king of work. Susjestins?
The dough just needs to go from a rough state to a smooth state...could be acceptable even after 2-3 minutes but 5 is better. Basically , once all ingredients are incorporated and you have a smooth dough, it's done at that point. Also, this is not hard to knead, so for your back, I would sit trying this at your kitchen table while sitting down - might be a bit easier 👍
