This cake is SO easy to make at home. And you can make it YOUR way. The only crap part is FINELY shredding the carrots, but that is a breeze if you invest in a counter top barrel grater.
I make a really good one with raisins plumped in hot cinnamon water, white chocolate chips and molasses. It actually holds up well as a wedding cake. The moist and fine crumb held up tier supports and icing flowers well. Fresh ginger, fresh nutmeg, Vietnamese cinnamon, it makes the house smell amazing every Easter. No nuts though, to may allergies
Around my neck of the woods if you want a "Top Notch Carrot Cake" you'll have to spend $70.00 from Maxi-B's. And although their Carrot Cale is to die for it's out of my price range. But I was surprisingly surprised when I took a chance on purchasing one of Food Lions Carrot Cakes! And let me just tell you, for $11.99 for a full sized, Carrot Cake it was pleasingly delicious! And it was so moist that it kept very well for 2-weeks, until I finally finished it off. Slurp!
Thanks, I have been on a personal quest for good carrot cake and I have had trouble finding it. I prefer those that don't rely on cinnamon, which I feel too often dominates other flavors. I am happy to know that the most highly rated one may be easily available at Walmart. I have tried their other version, which was just so-so in my opinion.
Its funny that this video came out today because we got some mini carrot cake cupcakes from Costco today. The icing on them is incredible but the cupcakes themselves the carrot cake is kind of a little lackluster. You can taste the walnuts and the raisins but the Cake part is pretty bland

The Just Dessert carrot cakes are vegan, I didn't stock them, but did mark them down to 50% when near expiration date, they still didn't sell well.
Giant food stores has a great carrot cake for underv$20.
