Gamecube Mario games have some of the best appealing art direction in the entire serie. The volcano, the trees, the mountains, the crown, the reverse logo, the clouds, the ice enemies... EVERYTHING HAS A FACE and I love it
One really interesting change that could have been worth mentioning (though it's technically added content, not cut) is that as late as E3 the game still didn't have a mini turbo mechanic. You could slide but not charge a boost.

Why does Nintendo do this? The moving text was actually something that would have made the game feel more... like a racing game, and it was MORE work to make it stationary because they already had code to make it move, as seen in the demo! And the stars, that would be a nice touch, again they had code for it. And in super paper Mario, this amazing man we are watching right now (so amazing, like the serious SMG4, SMG4 is my favorite tuber who focuses on pure entertainment, and TCCO is my favorite that focuses on Informative Entertainment) showed us that there is an unused happy flower theme, why remove it? If it’s already coded, use it, it won’t (usually) hurt! Maybe the files or some advanced crap like that, Idk.
