      you can make shoyuzuke egg yolks or maybe mayak gyeran with only yolks! Also there’s a Thai’s Kai Kaeng ice cream which is like, coconut ice cream with fresh egg yolk(frozen)

    Just something to consider - egg shells are porous and heating them makes them more so. If you sous vide them but then put them in a fridge which isn't completely sterile (no fridge is) they could absorb and develop bacteria, making the risk similar to if you hadn't done it in the first place. This RUclipsr is free to make her own choices ofc, but please be careful if you are doing this because you are pregnant or immunocompromised etc. To make the raw egg safe you need to eat it within a day or two of sous viding.

      Yeah, I was gonna say that pasteurizing doesn't prevent bacteria from accumulating later on. You definitely don't want to wait too long.

      I believe here in Australia we use radiation pasteurisation on all eggs sold in stores! So we can eat raw cookie dough or egg rice without worry!

      @@CadenceTheSloth the eggs aren’t the issue with raw dough. It’s the raw flour it can cause you to get salmonella. Am I still gonna eat it? Yes, but I thought I’d give you another thing to think about.

    Might want to reconsider marking with permanent marker. Much like brining eggs with shell on absorbs salt through the shell, so will the chemicals from the marker. Yes, the concentrations are incredibly small, but still makes the food slightly healthier without them. Cheers!

      people who breed reptiles write on the eggs with marker to make sure they stay upright in incubation and it never affects the animal. I'm pretty sure if the amount is small enough that it doesn't harm a reptile embryo it's not going to harm a grown adult human.

      @@rockercaterrorencountered4924 kind of comparing apples and oranges here, but the common solvents found in permanent markers, toluene and xylenes, could potentially bioaccumulate. Avg small reptile lifespan is 5 years. Our current life expectancy is around 78 years. If we keep getting exposed, gradually it'll reach high enough concentrations to affect our health- though, everyone has a different tolerance. It's best to reduce exposure. A mentor of mine once said that about 30 years ago, we chemists should cut our life expectancies by about 10-15 years due to constant exposure to hazardous chemicals. We laughed it off eventually, knowing it's a lot safer nowadays since we're more aware. An ounce of prevention is worth a pound of repair.

      Same, I cook them in boiling water for four minutes(but the water should be already boiled) on high fire, after, I immediately put them into cold water.
      This way my eggs' youlks are runny, but the whites are completely cooked.
      But it works with the types of eggs I buy, you have to experiment with temperature if you have different type of eggs(with thick shell and small size for example)

    in England we have the lion stamp which means the eggs are safe and you have a very low chance of salmonella if you ate them raw (like literally 0.001% of salmonella)

      Oh that's neat! In the us all eggs in stores are required to be pasteurized, and area safe to eat raw! But the same isn't true of local farmers who sell their eggs in an unofficial capacity, we simply don't have the setup to pasteurize them ourselves. But unpasteurized they don't need to be refrigerated! Which saves us a lot of space lol.
      Edited to add: raw flour is actually the most common source of salmonella nowadays! If you're making your own cookie dough and plan to eat it raw, don't worry about the eggs (Although you might want to skip them or replace with apple sauce etc for texture but it's personal preference) but please do bake your flour!

      ​@@chickenanon eggs in the US are NOT pasteurized, a simple google search will correct that assumption. Eggs in the US are washed, and egg PRODUCTS (such as egg whites in a carton) must be pasteurized.

      @@TerraHv1 you can put a raw egg either in the soup base (not boiling it but mixing it in later for a richer broth) or adding it as a topping to mix in with noodles and broth. Its the same principle either way, enriching the texture and such

    As long as you're also cleaning the ouside of the egg right before you actually crack it, this seems like a really good way to ease any fear of salmonella poisoning. I never thought about using sous vide for eggs but I might have to now... ❤

    I use my soys vide to make really good ramen eggs lol. The regular hard boiled eggs come out beautifully too. No green ring on the yolk if you're not good at timeing boiling water 😅

    Honestly so glad eggs are safe to eat raw in Canada, can just buy any carton I want with no worries 😅 I love raw egg yolk as a dipping sauce for meats like with hot pot!

    Depending on how long you let it sit in the fridge it can gain new bacteria from the ambient air. You could put them in an air tight container to be safer.

    Pro tip: you don’t have to just use the sous vide for huge slabs of meat
    You can use it for perfectly cooked chicken (breast or thigh, etc) and steaks
    There is also a lotttt of people that use their sous vide to perfect the boiled egg! As well as unpasteurised and other sorts

    fun fact the eggs are actually steril on the inside. its olny the outside of the egg that carries salmonella. the eggs should be fine but you can always check out the egg by seeing if it will float in water.

      Although you are technically right. You’re missing a very important piece of information which is that the egg shells are porous and heating them (even slightly) makes them more so. So they do absorb things that are on the shell and can potentially develop bacteria in the egg itself…hence the Caution to eating raw eggs.

      That is true IF the eggs haven't been washed and the chicken is vaccinated against salmonella. Eggs are normally covered in a thin membrane which allows air but not bacteria through. In the US, eggs sold commercially are legally required to be washed which removes the membrane allowing bacteria to enter the porous shell. These eggs are safe, but they must be refrigerated and fully cooked to be safe to eat.
      In countries where eggs are not washed and chickens are vaccinated against salmonella, they're safe to eat raw.
      If a chicken has salmonella, the egg can be infected before it's even been laid. So no amount of washing will save you there.

    I do this but I just buy 2 dozen egg packs and just pasteurize all of them before putting them in the fridge. That way i don't need to mark them! Every egg is pasteurized.

    I get my eggs from a friend who dotes on her chickens like they are her children, so I’m fine with eating fresh and undercooked eggs. I learned how to make oden eggs in my rice cooker from Marc at NoRecipes, so my undercooked egg dreams have come true. I love raw yolks, and I’m slowly coming around to almost raw whites as well. It’s an easy source of protein and they are tasty as well, so why not?

    My mum fed me raw eggs for like 10 years before I knew, we don't seem to have a big risk of salmonella here. I was given them in Milo milkshakes and it made it super frothy and rich. A raw egg yolk is the best rice topping.

    Never been to japan but I'd sat enjoying raw eggs are simply enjoyed by many regardless of race. I myself, have been enjoying them since the very first time i've had eggs😁. I only stopped having them & raw fish when i got pregnant, then came back craving once healed. It's my comfort food btw. 😊

    I will eat eggs raw if they are pasture raised (love dark yolks) and also don't have blood. I usually scoop those small pieces out with a spoon or something and then I'll cook the whites completely. So I'll either do sunny side up or if I want fully cooked but fluffy, a French scramble is also amazing

    I like how people think farm fresh means safer. My dad owns chickens and i dont eat those eggs raw because he does not give them antibiotics which kill bacteria! Ill take commercial eggs anyday over back yard farm eggs because we have gotten much better at food safety. Yall wanna eat like its the dark ages where food poisoning killed tons of people.

    I saw Duck with Egg Sauce on the menu.
    I ate a whole duck.

    I have chickens and I clean their eggs by first putting them in hot water-as hot as if you were hand washing dishes. This makes the inside contents expand outward so that bacteria are not pulled in through the porous shell. After cleaning the surface of the eggs with a brush, I dunk them completely one at a time in white vinegar which kills off any bacteria and sanitizes them. Then they are rinsed in hot water and laid out on a towel to dry before putting them in a carton and refrigerating.

    fun fact! that little redish brown spot means the egg is fertilized! it doesn't matter if you eat it and it doesn't effect the flavor I usually pick mine out bc I think it's gross (just my personal opinion) but you mostly see them in farm fresh eggs.
    I don't think I've ever seen a store bought egg with em'
    but yeah harmless little spot in the egg. it almost looks like a piece of dirt

    Right now there is an influenza outbreak in the state of Washington on eggs.
    I walked into winco one day and there was a note on the door with all the eggs being gone. So cook your eggs

    I am very thankful to be able to buy pasteurised eggs and egg yolks in small containers. I may not be able to get the satisfaction of breaking the yolk, but I’ll at least be able to eat foods with raw egg yolks. Gotta take what you can get :)

      raw eggs just come with a risk of salmonella, it isn't something that's present in all or even most eggs prior to cooking

      Have you ever eaten raw cookie dough? I don't think the chance of getting salmonella from raw eggs is all that high to begin with, so I don't get too worried when eating them now and again, but I don't make it a habit. Like cookie dough: I've been eating that since I was like 3

    Ugh, or sukiyaki, oh my God. Some pastured eggs from certain rural areas are so fresh that they don’t need to be pasteurized but the first time I saw in a video in Korea pasteurized eggs in the store I was like completely shocked that they are not a popular upscale grocery product in the USA.
