I make a similar cheese sauce with cauliflower in place of the potatoes. I'm sure the cost is somewhat higher, but menopause demands lower calorie-density. Anyway, I've not tried making grilled cheese and tom soup. Well, I've tried tom soup but all have been utter failures. I'm going to make some bread in a few minutes so that I can try this idea for lunch. Thanks for the idea. I, too, am addicted to bread, partly because it's frugal (and I can control the ingredients) but mostly because mine tastes better than any store-bought bread, hands down. Keep your amiable, inclusive, interesting, informative videos coming, honey. They are like visiting with an old friend. Thank you.

That looks like a great recipe! Happy Herbivore also has a plant-based oil-free grilled cheese recipe where you make a sauce of nutritional yeast, corn starch, non-dairy milk, and some other ingredients on the stove. The sauce becomes VERY thick. Then, you spread it on two slices of toasted bread instead of cooking the sandwich in the pan. It's good, but I'd be interested in trying your version too!
