First off Happy Birthday Scarlett. Mines only a few days away this Sunday. Looks like you had a blast and are still having fun. lol Scarlett shaking her head, "not good" is just too funny. Of course pesto with Zucchini noodles is good but im guessing she wanted a creamy texture and not crunchy. I wonder if you could get some fresh Amish white cheese and remake the noodle dish with the pesto but replace the Parmesan with a softer white cheese that melts and turns gooey. I would keep the bacon fat but would probably add a good amount of local Amish butter to go with it and saute it to blend it to the mac and cheese texture. Maybe keep the nuts out of the pesto so there is no crunch. That way the carb is the Zucchini and not wheat. I'm curious if you could make bigger noodles. I have only ever seen the small angel hair makers.
😊 thanks for your suggestions. There’s no crunch. The nuts are blended beyond recognition. And actually bring a creamy texture! She tried a bite of my pesto zoodles and was shocked she actually liked it!
Must say I do like me some mac n cheese like that every now and then! Everything else looked good as well. Nothing like those summer evenings ending the day relaxing around a fire. Happy birthday to the young lady!
Nice job in the kitchen. Looks amazing. If you eat garlic bread try to get elephant garlic. Get a garlic roaster. Makes life easier. After roasting place the garlic cloves into a bowl from their skin. Mix with butter spread on your choice of bread with whatever cheese you want. Melt the cheese. Enjoy!

I love it on spaghetti but rarely make it because I don't think of doing it, I should do so again. Would certainly have never thought of carrot tops as anything other than compost fodder. Grilled cheese with tomatoes and tomato soup is a hit with my two 13yo kids, should try out adding pesto. Thanks for the share!

My brother complained that the shells stck themselves up and glue themselves together. Darned if he wasn't right! So my new resolution is mac and cheese must be elbow macaroni. Call me a purist! Pesto on grilled cheese? I'll have to give it a try. My grilled cheese is usually adulterated with the addition of a layer of whatever sandwich meat is about to expire (but has not yet quite done so). Often accompanied with tomato basil soup - I suppose I'm approaching pesto there. Yup, thin slices of tomato in the sandwich is good!
Oh yes! Tomato basil soup is the best! We love it with our pesto grilled cheese. I don’t mind the shell shape, just can’t stand the powdered garbage from a box! 🤢
Confession: I have never had pesto 🤷🏼♀️ Maybe it’s because I’m a baby boomer 🤷🏼♀️🤷🏼♀️ I do love the thought of it on grilled cheese though! Fun video and perfect meal to continue with Scarlett’s birthday celebration 🎉
