Hi yes you can use flour, but they some times they can stick to the tray that you are resting on, whats great about semolina this gives the donut that Crispy bit laters
Cake flour has no baking powder in it, so you can use self raising flour but don't add baking powder to the recipe, it works out very well, and moves very quickly, so when you are frying you may need to keep them in the fridge laters Steve

To be honest, I don't remember, but if I was making them today, I would use a chip pan or my doughnut fryer in my bakery and float them 😀

You can keep them in the freezer up to about 6 months, I lay out first in freezer, then put into a bag, yes do defrost first before reusing
