“Better than buillon” is basically concentrated mirepoix + salt + yeast extract. I don't think a mirepoix paste does much to improve the flavor of your steak, but the salt and yeast extract do. You can buy and use the yeast extract separately (or DIY, i.e. ruclips.net/video/7zEWtqkp1v8/видео.html). Or make it radically simpler. Just buy a packet of MSG (it will serve you years). The MSG is basically what makes the yeast extract a seasoning. Why do some many products contain yeast extract, and not MSG? Well, just like table salt,MSG doesn't have any flavor itself, but yeast does. It's what makes Marmite a Marmite, but arguably doesn't really play a role in broth concentrates like BtB. The ultimate reason is that the Americans are shit-scared of MSG. Quite unfortunate.
Great comment ! I’m just seeing this now because it was held because of the link. This could be a great conversation especially about MSG. Ive used MSG to season burgers in the past and so doesn’t some burger chains here in the US use it also.
