      About the concrete edge restraint..
Can't you just line the "curb" with a foot of mulch, the mulch would act as a devider so the grass doesn't burn

After watching this video as long as pricing was fair I would hire this company to do my paver work with no hesitation any day of the week. I wish the majority of contractors would put this type of video together to represent their work. It would make selecting a contractor so much easier.

It looks amazing, goes great with the raised patio they built. I completely agree on sand and edge supports. I want the plants to grow right up to the edge, and I want those deep stakes grabbing the soil as they rust. They get more secure over time, but still keep better flexibility than concrete.

Aluminum screed bars don't warp in the sun either.
Milwaukee even made some concrete spirit level with a magnesium screed bar on them.
They put up an advertising video of them : ruclips.net/video/n56Ebd-EPZw/видео.html
Maybe try one out for indoor works, like showers where you have to have a fast drain ?
Shop around of course, I doubt Milwaukee are the only ones that make stuff like that.

Love your videos Stan - longtime follower, though I am a landscape foreman and have used many edge restraints including plastic and aluminum. If you do the concrete one properly on the right sloap with enough cement (which we do) - grass grows perfectly fine and the concrete floats with the patio. the issue with the edge restraint is the galvanized spikes will pop up even if you use 12" spikes. (Canada's heave thaw is nasty)

In my personal experience and research the key to a long lasting interlock job is a good well packed base thickness depending on your climate. I use Granular A which is crushed gravel mixed with sand which helps everything lock in togethor. For a bedding concrete (fine) sand which they are using in this video gives you a nice mouldable layer to lay your pavers no thicker than 1". People are also using HPB(High performance bedding) which is basically pea gravel which has good drainage properties and holds a bed. If its for a driveway look into some kind of geotextile mesh (geogrid) type material which acts as a buffer between your base and the soil beneath it to help reduce the instance of tire dips or you can pour a rough concrete underneath strengthened with a rebar grid.
