      my dream is to eventualy open my own ramen shop as well in the area i live in live like 8hrs away from NYC alota people think it wouldnt work here but i think it would and would become a hit :) ne ways nice vid

      King Katura if you want to open a ramen shop you must know how to make ramen (obviously) can you tell me how to make a good tonkotsu broth? the videos I find are too vague or not good at all. Thx ^^

      it depends on how good you want. to make a awesome clear broth which is what most real Japanese r amen shops use as part of the main stock can take a couple days to make. so private message me on here whether you want the real deal or you want it to taste like the real thing without going over board and taking forever. you can use alot of pre-made ingredients some of which you wouldn't think would make it taste the same. if its just for yourself you may not want to go all out.

    I love the attention to detail and minimalistic approach. On a side note, Ivan must taste Shio Ramen all day, so that blood pressure is taking a beating. Hence the road raging. Too Funny :)

    ramen is supposed to be eaten right away, they say in japan there isn't take out ramen because real vendors will take it so seriously that the noodles are ruined after 5 minutes.

      Ivan ramen NYC is still charging the market price for a bowl in Manhattan, $17-19 - even the smaller family owned shops which are terrible charge that price. I am super excited to try it for the first time this weekend

      Leave The World Behind Working in a fully functioning restaurant and a kitchen are two different things. Also no one said it was tough, however restaurants are fast paced, stress filled environment where you don't have time nice words and soft feelings. If a little course language throws you off you would be surprised to work on a line.

      I was a bus boy. It was terrible. People are constantly yelling at you. It is extremely fast paced and stressful. Whether you are the main chef or the bus boy it is stressful.

      Dude. I worked as a bartender at a rock-pub and the chefs were scary as fuck.
      I accidentally grabbed someone's ice water by mistake when I was working the floor, and he came up to the bar and slammed a knife in it.
      If there's no swearing or death threats going on inside the working space of the restaurant, you're not doing it right.

      Making a good bowl of ramen is very time consuming and labor intensive. I made one bowl just a few days ago, and it took me 2hr + of actual labor time. The 2 broths could take up to 24hr+ of cooking time

    my noodles always turn out like a mess of glue. lol
    Is the trick about deshelling hard boiled eggs with backing soda true? cant get that to work.

      eggs? try this.... half inch of water in a saucepan, bring it to the boil... put in six room temp eggs, not chilled.... lid on, steam for exactly 9 minutes, with an extra 30 seconds for harder yolks.... as soon as the time is up flood the pan instantly with cold tap water. Shell eggs when cool. Perfect ;) Use a metal folding steamer for even better steam coverage. Must use a lid, water must be boiling when you put the eggs in. EDIT: only enough water to last the 9 minutes at a boil, you are not boiling the eggs, steaming them instead. Food Wishes channel has this method.

      keep the eggs immersed in cold water, then tap them on the edge of the pan to split the shell, seems to work easier. Try one semi cool with a little salt.... perfect.

    Why salt from different regions of Japan? What sort of impurities do the salt have that make them taste any different from any other salt?

      +Embolo Bolo If the salt was chemically only pure Sodium Chloride (or othe chemical salt) and contains no other impurities (and therefore flavors), then they should all taste and function identically when dissolved in a soup broth. Which means if there are no other impurities in the salt, then acquiring salt from different regions of Japan is just bullshit since they should all be functionally indentical to generic table salt bought at any supermarket, and shows a lack of understanding of basic sciences / chemistry / cooking on the part of the chef. Or shows dishonesty.

      +Neil Davis If a sugar pill can cure cancer (hyperbole to make a point) based purely on placebo, then even "chemically pure" salts from different regions, if you /know/ they're from different regions, can produce a different flavor. Now, you could argue that this is an illusory flavor, not real. But that opens the epistemological door to the philosophical debate of ontology itself, or more to the point, the verisimilitude of prime ontology.
      As the award-winning science writer Jim Baggott -- who’s lately published a book called “The Beginner’s Guide to Reality” -- sees it: “Without our minds, what do you have? Photons, atoms, rarefactions in the air - all producing different patterns of stimulation of the brain.
      “In none of this physics and chemistry,” Baggott goes on, “can we find colour, taste, scent, softness or melody. All are secondary qualities produced in the mind.” And he insists: “A world completely without colour of any kind would be invisible to us. Without colour of any description, we would be blind.”
      And if that’s not enough, Baggott continues: “We have to accept that we have no evidence to support an argument that our representation of reality - our reality of appearance, translated through our senses - is identical to reality-in-itself.”
      Essentially, there is no sensory data stored anywhere in a salt or sugar molecule. They are psychological constructs, or Qualia, with no basis in objective reality, existing entirely behind the veil of the phaneron.
      A qualia that is triggered by a salt molecule is no more or less real or illusory than one triggered by a memory or hallucination. On the stage of the mind, both are equal. If a person experiences qualia from ingesting salt from one geographic region that they describe as meaningfully different from the qualia of ingesting salt from an other geographic region, even if both samples of sodium chloride are elementally pure, the experiences are no less real, valid, and true. They really *do* taste different based purely on were they came from.

      That only works if the person is dumb enough to fall for it though. Sure, the Placebo effect is known to work even when people "know" it's a placebo, but that's debatable. (It's quite possibly an artifact of assumed deception, i.e. the patient thinks it's actually not a placebo, or assumes it will work anyway)
      So with that being said, maybe I'll open up a sandwich shop and tell everyone that the ingredients all come from deep space or some other higher dimension and that eating it will be the ultimate culinary experience and will cause a spiritual epiphany. Anyone who gives the restaurant a poor review is clearly a moron still living in Plato's cave.

    There are the white guys who go to Japan to teach english, hate it, and come back. There are those are love it and end up eschewing everything about their past life to be come japanese. Marry a japanese woman have kids who dont know english.
    and now I guess there are these dudes. the professionals who have their own passion separate from japan, but also japanophiles themselves, who go there, own shit, then come back and proceed to own it here too. This dude and the dude who invented the ramen ba-ga are like that.

      Most Ramen places get the fat from when they cook the Pork Belly. Roasting a large piece of Pork Belly for 2 hours will reduce a lot giving you a substantial amount of fat.

      The best chefs are usually the ones that don't have a sense for show business.
      He lets the food talk for him. Unfortunately I haven't had his food but running a Ramen shop in Japan as a white guy and being successful means he probably has some of the best Ramen in Japan.

      nah thats just the amount of salt molecules and the way they are ground up which make it look less. Intensity = an amount of salt.

    Typical New York anger - who cares if his ramen is amazing? If you are all about success and getting somewhere fast then that gets transferred to the food - he didnt learn the basics of cooking which is love. 👎🏽
