  • Not all turkeys are alike. Each has been bred for specific qualities, and that means the flavor of each breed will vary too. Steve and Brian talk about what goes into the flavor of a turkey and give the results of a blind taste test determining which breed has the best flavor.

Here’s my theory on poultry taste… the commercial meat birds, be it chicken or turkey, taste like the bagged feed. They also smell like it. Heritage turkeys usuallly free range more, and are usually fed more of a scratch diet when fed at all. If youve ever kept and fed your own meat birds with bagged feed, you know the exact smell I’m talking about, that sweet sickly smell of digested bagged feed…

Turkey is my favorite meat. A lot of folks say it has less flavor than other meats, but I think the flavor it has is delightful. Having more of that flavor would be awesome. Of course turkey also has the mental association with family time and celebration going for it. By the way, I don't think you've done a Midget White spotlight yet, have you? If it's that tasty it deserves one.

I agree that turkey is one of my favorites! We have not done a Midget White spotlight yet, but don't worry. It's in the queue and will appear here before long.

Blue skates are a great choice. One of the best for maintaining a self-sufficient flock.

Hey, I want to know if it's possible to breed midget whites from crossing royal palms and other breed (white hollands maybe?). I'm completely newbie about this, the problem I have right now is there's no one who sells broad breasted whites in my country, and from what I heard they're also difficult to breed and need artificial insemination.
    Thanks in advance.

The Midget White and the Beltsville Small White are both distinct breeds of smaller turkeys. Each one will breed naturally (unlike the Broad Breasted) and they can be crossbred. Both are rare and hard to find. It is possible to select breed for smaller birds, though I don't think we are the experts in that area.

I always believe a scientific based blind taste test!
