For every 1 cup of icing sugar use 1 tablespoon of meringue powder

I watched this video before making royal icing for the first time and I was super confident about my icing consistency because of it. Made about 70 sugar cookies with rainbow colours it was a ton of fun and all my friends got for Purim. And next time I can include my kids in the process, it was not as intimidating as I thought it would be though I definitely needed a trial run without watching small fingers.

How much water do you normally start with for the consistency you prefer?
I would say with 1kg of icing sugar, I use about 3/4 to 1 cup of water
Hi! I have a question about dehydrating cookies in the oven. Do you have concerns about an oven that's used to bake other items? I've heard that royal icing can absorb other smells. I'd love your advice on this 🥰
I just dehydrated 80 cookies in the oven a couple weeks ago. They did not pick up any additional flavors
None at all! I’ve done bacon right before dehydrating and it was all good 😋

My icing crust over too quickly regardless of my consistency. I don’t have much time to work them if the scribe. Any ideas?
It's the meringue powder, it dries out too quickly. It's only there to give a shell like finished touch. Just make it without the egg stuff.
