      I don't normally eat meat but did start eating a little bit of chicken very rarely in the past few months .
      I'd love to know what in the world it is my neighbor gave me before she moved that I put in my freezer and thawed out .
      She said it was chicken and it's these long skinny rectangular pieces that felt spongy after they thaw out and they tasted so -so , nothing great after I cooked them .
      Clue , it reminded me of the same crappy chicken they used about 11 years ago at Subway when I used to eat there and that felt spongy also .
      Any ideas what that was ?

    This was a lot of fun to watch. I do personally feel that a lot of companies put the flavors into the breading so even though I was initially surprised that all breading was removed for the experiment, it makes complete sense. I’m glad it was really fun for everyone

    I really love the fact you didn't just make a taste test but also showed us an amazing way to pimp up ANY store-bought chicken with some homemade sauces! Plus, you made this experiment very fair for each brand even though you had to spend nearly 3 years in the kitchen to do so :D But at the end of the day, I am just glad you had such a great time at that party!

    interestingly, Quorn have been making meat analogues from fungal protein since the 80s, and has been pretty popular in the UK for decades. I'm not sure why it never took off in the US, but it's funny to hear it being talked about as the "future"

    I don't mind red meat and chicken in their vegan versions, but the one thing I just can't stop having is fish and anything from the sea. I'd love you to keep trying to make the perfect salmon!

      fish was the last thing I gave up before truly going vegan, although it was totally worth boycotting, fish and crab is definitely the only animal products I'd say I prob miss the most and would love to see replicated better

      Some 15? years ago, Morningstar has a veggie salmon. The taste was so authentic that I had a difficult time eating it for probably the first 6-8 times I tried it (I used to love salmon). Sadly it's been discontinued. One thing they did which probably gave it both that fishy ocean flavor and look, was to put seaweed/nori on the bottom, giving it that crisp fish skin look when cooked. Maybe give that a try?

      It’s all a fraud. Unless your chicken eat vegan feed. Not better for the environment. I can raise chickens without killing another animal or clearing the land. To grow veggies the land is stripped and every animal is killed to protect the veggies. Eat more meat.

    This is just one of those things that shows you that when you tell people it’s vegan or if they go in knowing it’s vegan they already made up their mind that it’s nothing like it. But when they don’t know they don’t really know (most times).
    That said, it’s probably good you all know if anyone has a specific food allergy before tricking people into eating something lol
    It’s like the episode of the Simpsons when Lisa is pressured to eat meat and she runs into the Kwik-E-Mart, chomps down on a hotdog and then Apu tells her he switched them to tofu dogs and no one knew the difference.
    I think when it comes to processed meat foods like burgers, hotdogs, chicken tenders, faux meat does a good job. It’s the whole cuts that companies like Meati are working on getting good enough that people will choose without feeling like they have to “sacrifice” flavor, etc.

      So the food allergies reason is the reason why I didnt trick people into eating fake meat. They new going into the test that they would be trying fake meats and knew what was in everything before had. The only trick was that I told them one of them was real, which none of them were

    Apple jelly (I've only had homemade, might be different bought) makes a great honey substitute for those who can't/don't want to eat honey.

      @@lilly_koii when used with fries or some other savory thing you typically eat honey with, it has more of a nutty taste to me but still has the sweetness of being a fruit jelly.

    I really thought Annie's jackfruit would win. My wife and I absolutely love their brand. I was also wondering how Meati would be as well. Mark what did you personally think of Meati?

      So personally I thought Meati was incredible... just incredible! Its taste and texture were so spot on to me that I was shocked it didnt win. The big comparison here is that it was a whole cut vs the nugget which is what I think gave it away along with some of the taste. BUT I've cooked it a few times since then, just simply pan seared and its amazing!

    I feel like adding real chicken would have made it fair cause in reality it would be the control and maybe some people might have or might not have (we'd never know) favored the real chicken if it the vegan chicken was that similar or that much better than the real chicken. IDK... I'm just a sucker for like formalities but I'm not doubting the tastefulness of these. The sauces look amazing however.

      @@Bee-sq4nd One person buying one single cutlet of chicken won't create demand for any single part of modern agricultural farms or factories. Now if you were to buy off a small farmer with limited amount of chickens and far smaller ones at that like my own, then you're gonna not meet demand and you have to increase prices massively to make up for that loss. That said, I have my own chickens that we personally slaughter and eat whenever we choose to. Big plump ones that are well fed. Yeah they die. I think that's what happens when most of our food becomes our food. Plants included. They don't have feelings but they don't do anything anymore other than become food and nutrients for us. I'm sure you wouldn't want to be a part of a massive world issue where the food you consume is causing massive pressure in infrastructures such as water supplies for 1st and even 3rd world countries right? I mean you love Almond milk or even Oatmilk I presume? Yeah it takes more water and resources to produce a single cup of almond milk than it does to produce a few gallons of dairy cow milk. It costs virtually nothing compared to both cows and almonds to produce eggs from a chicken and then use that chicken to feast on later on. It's call efficiency of resources and a lot of these vegan alternatives cost a lot more to even produce than you think and normally don't even provide half as much product for double the price and resources (double being conservative for sake of argument) I kill my food. I know where it comes from and it provides a lot more than trying to find a new way to make an enviornmentally unfriendly product grow to be only 1/10th of what I could produce much cheaper and much faster. In the end you produce more demand for harmful products and even labor from where these plants and products come from. Food for thought.

      Honestly, with authentic chicken among the options everyone would have guessed unless everything was cooked a lot. The orientation and consistency of the fibres of chicken are still not fully reproduced by the alternatives, while the flavour profile is not so different.
      You could misunderstand a chicken burger, not a chicken nugget.

    I'm a bit curious about Meati, but slightly wary as I'm wondering how close it is to Quorn (which is the only product, veggie or not, that has ever given me a splitting migraine I think because it's somehow distantly related to amoxacillin). I adore the Gardein products though. Whenever I'm getting those fast food type cravings, I'll go and grab a bag of that from the store, and it knocks them right out.
    Update: I emailed Meati and they confirmed that the ingredients for their products and the strain of mycelium they use is different from Quorn

      Quorn is fungus related, so if you have a mold allergy I would highly recommend you stay away from Quorn.
      Which is sad....because I've had the Quorn Meatless Patties and Meatless cutlets and I'll be damned if they weren't the closest I've ever gotten to real chicken. Slap them on a bun with some mayo and pickle slices and I could NOT tell the difference.

      hm im horribly allergic to amoxicillin and i had no idea! i love quorn, their vegan turkey is probably the best vegan product ive ever had.

      @@barphh I could very well be wrong! I just know I got the same horrible splitting migraine after eating Quorn that I did with amoxicillin, and one site on the interwebz mentioned something related. Either way, no Quorn for me 😅

      @@barphh Didn't know there was a meatless turkey product, it's not on our stores over here. Just meatless chicken and Beef.
      The beef is not so great, but the chicken products are hands down the closest thing to chicken that I've had.

    You said that KFC uses buttermilk and egg for breading the chicken. I worked for KFC for two years as a chef and we never did that... just chicken and secret recipe flour.
    Or is this all dehydrated into the flour itself?
    Btw, props on the amazing audio on this video. Too many channels focus on the video and forget completely about the audio aspect.

    Holy crap -- you took the breading off?!?!? I've always been impressed by your dedication and thoroughness, but I think you've bested yourself here (along with your fantastic helping hands). I was tired after watching all this. You and your crew did so much work! Really enjoyed the results -- and I'd love it if you could post the final results (please).
    I think this would also be fun with something else, like cheese.

    The 'Honey' mustard recipe I use is 2tbsp vegan mayo, 1tbsp Dijon mustard, 2tsp molasses (or brown sugar, 1tsp soy sauce.

    I hate to say the Raised and Rooted was amazing, like mcd, when they added egg whites. I didn't realize it had eggs until mid bag. After buying the actual vegan ones they just weren't as good. The breading is off. Surely there's a sub for egg whites for that 🤔 I'm glad they took the eggs out but it needed a replacement!
    Anyhow, I haven't bought them since.

    It's good that you tell people there's vegan chicken on the table (I assume your friends would know nonetheless) as, some people can have strange and unique allergies...
    I've read some threads on reddit about things going sour because people were *literally* tricked into eating a vegan meat and they couldn't handle one of the ingredients (I think it was the seitan) which ended up for them at the hospital.
    Yes, almost no chance or slim to none it happens but, it's always better to know it's a thing

      oh gosh - what if the person was celiac and had seitan, which is basically just gluten? I'm all for introducing vegan options to people but just not down with tricking people.

      Yah exactly and yet its extremely rare to be allergic to chicken because its literally an unprocessed natural food. Seitan which is gluten is extremely allergenic to most people regardless if you have celiac or not. These processed vegan foods are extremely toxic and the fact there is such enthusiasm to eating such trash is just insane. If you crave chicken EAT CHICKEN. If it's for moral reasons more animals die from plant harvesters look it up.

      @@electron-Volt I had a friend who got horribly sick from impossible burgers because he was tricked into it. He literally has multiple autoimmune issues and only eats beef without seasoning because it's so bad for him. Vegans need to stop tricking people because you dont know who you are hurting.

    I truly appreciate all of your effort into making fake meats, but as vegans, we are not as obsessed with substitute meats as we are a complete nutrition. I would love to see recipes that don’t focus so much on substitute meats.

      Thank you so much! Really my whole channel is about finding the best, most realistic plant based substitutes. I don’t focus on nutrition because I’m not a nutrition expert and I feel things like that should be left to experts.
      I’m also not focused on a fully vegan audience as I want to provide plant based substitutes for everyone.

    When I used to live in Taiwan, I used to buy fresh made vegan meat products at fresh market every morning or afternoon with a very reasonable price, now I move to Malaysia, vegan products, including tempeh and tofu is not that cheap and mostly are not real ingredients, and to buy many of those vegan ready meat is ridiculously expensive and none actually taste that good, always too dry.
    What you did with the new breading really help to make it better, it is a hard work but it's worth it.
    I'm now making my own vegan meat too, thanks to many of your video, I learned so much how to make it tasty.

    Honey cultivation doesn't harm bees, I don't get the fuss over honey. (beekeeping has other environmental concerns, but that's a whole other topic)
    Agave isn't very sustainable. I wish folks would just use honey, or something like date syrup (my personal preference) I don't know how much more sustainable it is so maybe try something else.

    Great video, but I need to see the RANKINGS! Okay, so Impossible won, but where did Beyond stack up? Lightlife? Would've loved to get a more detailed breakdown of how people perceived ALL the brands. Here in Canada we have access to some of these, but not all, so it would've been great to see how they all compared.

    Haven't tried the Jack and Annie's nuggets, but their hot dogs are pretty good! Of all the rest, I like the incogmeato and the gardein ultimate best

    Chicken nugs are bad example of fake chicken because they are barerly chicken themself. You should go for goujons or tenders.

    I like the gardein more than the impossible. The impossible seems too soft to me. I like the Dino vegan nuggets more than impossible too. They have more chew. The impossible are great tho. Better deep fried than air fried

    I personally am not vegan, but that doesn't mean I don't enjoy trying a couple of the things you make, and impossible nuggets are super good, and the impossible whopper from BK, was good enough for me to trick my family, they thought BK just had new spices or something. Now I do love mushrooms so I think I'll try that mushroom chicken thing and see how it is, here's hoping it's not ridiculouslu expensive lol. Love your videos, keep up the good work

    Isnt just straight up harder to distinct vegan chicken from normal chicken if you don't have any normal chicken reference? This feels like cheating

    I'm curious if you'd consider tackling something like making chicken breast-- I haven't had any success with seitan and the jackfruit recipe doesn't seem to work as well without the skin, but I'd love to be able to have chicken breast for something like cordon bleu, chicken parm, or hardy stew chunks, stuff of that nature. I love nuggies and I eat a lot of gardein and asian faux meat products, but this nut hasn't been cracked yet to me... same for chops (pork, lamp, steak), or any kind of meat that isn't processed. How do you replicate marrow and grease around a bone? How do you get that texture? Can it be done? I see so many pics on the seitan Facebook but I've never had any luck replicating...
    Also, love Annie's. Their sausage is SO good.

      Have you tried Kim Weston's Butter-Starch WTF seitan method? It works really well for unprocessed meats apparently! Chef TJ is also incredible - he has a RUclips channel under the same name. He's done bone marrow, steak, whole chickens, etc. Kim Weston also replicates the sticky texture between skin and bone in fish using an agar agar solution on his RUclips channel!

    Love the idea of this vid, love JP and ya'll but, I think you should leave the original breading on. Scientists, such as yourself, probably toiled over what breading ingredients would help both the taste as well as encapsulate the texture. I'm probably overthinking it but ... great video again!

    I like these videos, I'm not a vegan but it's great to watch iterative progression with consistently better results and with how well the fake chicken turned out it's pushed me ever closer to killing and cooking all of my meats excluding the venison I already harvest each year.

    honestly vegans should eat honey. i mean it is better for the planet and we do like bees . atleast if you eat locally produced honey its better for the climate than imported agave.

    hey mark, i'd love to see if you could make a video on vegan gummies? i know agar agar is the most commonly used ingredient, however i've heard they don't have the same chewy texture that gelatin provides, which is really important in my opinion

    One thing to keep in mind. Allergens. I'm guessing for these people you knew their allergies. I don't care what food is called. I will pretty much eat anything.
    As long as it's not one of my allergies. Yellow peas are one, soy is another. I make a black bean burgers, they don't look like meat, I don't care if they do, I just care how it tastes or if it's going to make me ill. I love other alternatives like cauliflower, jackfruit and chickpeas. So it's not necessarily about attitude or perspectives. But what someone CAN or CAN'T eat.

    wait so you didn't want to fool people into eating Vegan chicken, so you told them that they were doing a taste test between real chicken and vegan chicken, but there is no real chicken...
    me think you lost the point along the way, maybe it got eaten with one of the vegan chicken bits!
    Also what's the point of being vegan if you still crave meat, just be responsible get a chicken and learn not to waste the carcass. I feel this is hypocritical, on a scale from 1-10 it's a 20!
    Side note if you're eating Fried chicken( btw way too much oil) then isn't that counter productive to being vegan!

    Try the Daring chicken. I'm a chef, and with most vegan or vegetarian subs, the texture is off putting to me, along with the myriad of ingredients. The Daring chicken is made with 5 basic ingredients and it has a shredable texture that mimics chicken. It' s one vegan sub that I will eat.

    For vegan honey mustard, I'm not a big fan of agave so I usually just make a simple one with vegenaise, spicy mustard and maple syrup and that's super good. I guess that makes it more of a maple mustard 😂 I've also made it with dijon mustard which is awesome too

    You know, could you do some sauce videos? I mean, I know you just did, but it really makes the difference for my family. I just did a stirfry with peanut sauce, and even though they knew I made fake chicken, they really enjoyed it, esp as leftovers (which doesn't always happen with my seitan).     I live in Tel Aviv- concidered to be one of the most vegan friendly cities in the world. And we don't have even a third of the brands you showed... ( but on the other hand, you can get vegan food literly everywhere in Israel)

    The only thing that bothers me about fake meat is that the stuff I can get is always pre-seasoned with all the wrong spices, and it turns out tasting horrible. Even if it was real meat I still wouldn't eat it because of its seasonings.

    I don’t see a problem with feeding meat eaters vegan chicken without their knowledge. Just saving them from salmonella. Also, what’s the big deal, it’s vegetables, grains, or fruit. As long they’re not allergic. And do they know what they’d be putting in their bodies eating REAL chicken nuggets? 🤮 Jamie Oliver eats meat and showed how gross chicken nuggets are a long time ago.

    So let's just say that this was an epic endeavor that is better than anything any test kitchen ever did. The idea of throwing a party to do it made it really authentic and the trouble you went through to pull it off was outstanding. Your backyard is beautiful. You and Monica are adorable and she was really dressed cute for the party. It's crazy that you don't have over a million subs yet.
