    For those that are confused about the sweetness aspect, cream of coconut is a syrupy mixture of coconut and sugar that's very sweet. It is completely different from coconut cream which is basically coconut fat. This is really important to note.

    Hi, what exactly is cream of coconut? I live on an island and have access to fresh coconuts so I need to know exactly what you're referring to as cream of coconut.
    Also what did you use to sweeten this ice cream???

    Hello. I don't know if it's been mentioned or posted but it may be best to chill your ice cream base in the refrigerator for a couple of hours before putting it in the freezer bowl. Especially if it's a hot day and your kitchen is warm. It helps the freezing process. Thank you.

    Made this recipe today, without a machine as I don't have one. I haven't used coconut cream before, only the milk, so didnt know how sweet, or not it was going to be. The brand I used was Oriental Express, but was not sweet at all. As suggested by ilovefood, I added confectioners sugar to taste. Looking forward to tasting it tomorrow!

      Hiya, no, I didnt hav a machine. It wasnt nice at all. A few factors, one lacking in machine and the other, was the brand of coconut cream or milk. Mine wasnt coconutty enuff, or sweet. Never mind.... :(

    I just want to add that it's a good idea to refrigerate your ice cream mixture before freezing it in the ice cream maker. It freezes MUCH better that way.

    no this is a NATURAL flavored coconut ice cream, if you ever ate coconut straight from its shell then yeah thats what it taste like, if you want a sweet candy like artificial flavor, use coconut extract

    I could be wrong, but I don't think I am - it looks like she's using the Coco Lopez brand of coconut cream which actually has a lot of sugar in it. It's what is traditionally used in the Caribbean to make pina coladas. It's sweet enough that you don't usually need to add anymore sugar to a dessert, but you can't control the level of sugar either. If sugar is an issue for you, it's best to use unsweetened coconut cream and add the type and amount of sweetness to your liking. Hope this helps.

    Laura, did you use sweetened or unsweetened cream of coconut? Should I add sugar if I use the unsweetened?
    Although basic cream of coconut is not a sweetened product, many types of cream of coconut sold in stores come presweetened.

    🏯 Banana Coconut Ice Cream
    1 Cup of Heavy Cream
    1 cup of granulated sugar
    1 Banana, pureed
    15 oz can of Thai Kitchen Coconut of Milk
    15 oz can of Thai Kitchen Coconut Cream
    1 tsp of Vanilla Extract
    Whip cream with an electric mixer for air to thicken in churning the cream. Place cream in plastic container then in refrigerator overnight.

      🧁Chocolate Wafer Cookies
      1 ½ cups (6.75 ounces) all-purpose flour
      ¾ cup (2.4 ounces) dark unsweetened cocoa powder
      1 cup plus 2 tbsp sugar
      ¼ tsp salt
      ¼ teaspoon baking soda
      14 tbsp (1 ¾ sticks) unsalted butter, slightly softened
      3 tbsp whole milk
      1 tsp pure vanilla extract
      In the bowl of a food processor fitted with the metal blade, add the flour, cocoa powder, sugar, salt, and baking soda. Pulse the ingredients a few times to combine thoroughly. Dollop the butter around the dry ingredients and pulse a few more times until the butter starts to incorporate and large chunks begin to form. Mix the milk and vanilla together in a small bowl. With the mixer running, pour the milk mixture into the feeding tube in a slow and even stream until the cookie crumb mixture starts to form together and ball up on the sides of the bowl.
      Transfer the cookie dough to a work surface and knead it a couple of times to fully incorporate all of the ingredients. Divide the dough in half and shape each half into a long and narrow log, about 1 ¼ inches to 1 ¾ inches in diameter. Depending on how large you want your wafer cookies to be will determine how thick to form the log. Wrap each log in plastic wrap and refrigerate for at least 2 hours or up to a week.
      Position the oven racks to the upper and lower thirds of the oven. Preheat oven to 350° F. Line baking sheets with parchment paper.
      Slice the dough logs into approximately ⅛-inch thick slices and lay the dough rounds on the baking sheets about 1 inch apart. I formed my dough into 1 ¼-inch diameter logs and was able to fit 24 cookies on each of my baking sheets.
      Bake for 10-12 minutes, rotating pans from back to front and top to bottom halfway through the baking time. The cookies will be finished baking about 1 ½ minutes after the puffed-up dough deflates so try to keep an eye on them. Cool the cookies on the baking sheets on wire racks for 5 minutes then transfer the cookies to the racks to cool completely - they will crisp up as they cool.

    For those he had a hard time finding cream of coconut, take a can of coconut milk and refrigerate it.When you take it out It'll look just like cream of coconut.Hope this helps

      But according to what she said that's exactly what you're not supposed to do because coconut milk doesn't replace the actual coconut cream, it's two different things!

      IT WORKS. The milk is thick and because it stays cold, I have done it many times and it works great. I use whole coconut milk and light coconut milk (both come in cans) and refrigerate it. I use the cream from the whole milk and leave out the liquid, and use the liquid of the light coconut milk. I dont even add dairy milk. It tastes sooooo amazing

    OK I figured Laura might not reply to the comments so I did some google searching.
    "cream of coconut" is typically sweetened like sweetened condensed milk, lots of sugar.
    "Coconut cream" is not sweetened, no sugar added.
    If this is correct, this recipe calls for "cream of coconut" and should be plenty sweet enough!

    Laura can you clarify something for me? I've seen two different kinds of coconut milk on the market, one is usually in the Asian food isle in the supermarket in a can, the other is in the refrigerator by the regular milk, almond milk, chocolate milk etc.. usually in a 1/2 gallon. I'm confused, which one to use.

    If you want ice cream right away, but do not have time, then you will like this Banana Sorbet Recipe!! Put 2-3 frozen bananas in a foodprosesor, set the machine on and leave it on for approx. 2 minutes you do not see any banana chunks. HAVE COMPUTER FOR LONG!!! Now it is finished. Eat right away. Create announce how much to eat. Best to eat right away.
