The first time I tried to make this I rushed everything, and only used a toasted bread. This time, I took my time adding the cream & egg yolks and kept the temperature lower, while allowing for some cooling. Everything turned out great. Thanks, Kellie. Sherry is good. Also I would add the liquor of choice to the roux in order to cook at temp to eliminate the raw alcohol.
