Unfortunately, first half the video is just playing with the finished product. And while the finished product is totally cool; quality-wise it suffers from the weaknesses of paper and tape.
I had just discovered these Shashibo cubes last weekend, and couldn't wait until this weekend to try them out. So I went to Hobby Lobby and bought 10 sheets of 11" x 14" poster board. The distributor is Renewing Minds, Oklahoma City, OK. $5 (made in China). I trimmed it down to 14" x 9.5", and drew the central lines at 7" lengthwise for the vertical line, and 3.5" and 5" heightwise for the horizontal lines. Made for a bigger cube, but I was fine with that. I didn't want ugly tape on the edges, so I tried gluing the insides. That didn't work too well because the glue came out and looked awful. So I was stuck with "invisible" scotch tape. Very visible, unfortunately. Not very tough, either Next time I will use strapping tape and use contact cement to put the nice paper on afterwards. And start with plastic panels, not paper. I'd add magnets on the inside too, but figuring out the polarity is going to be interesting (notice the hands are always holding corners together; it doesn't hold together nicely by itself). I suppose I could just buy a plastic one from amazon or funinmotion toys ($21). Though buying one is not as fun or engaging as actually building one.
BTW, at 6:30, when you put the six modules together, make sure you don't inadvertently turn one of them upside down. I did that and wasted 30 minutes trying to make a cube before I restarted at this point. The right angles of module must be connected to the next module's right angle; not the obtuse or equilateral triangle.

video could be better but best one I've seen. I don't think pasteboard will hold up well nor stay together so I probably won't do this one. And would there be some way you can apply the decoration before assembling. And how to assemble the individual units and how to combine six of them to form the whole is rather glossed over. I'd like to see more detail on those parts. Why do instructional videos always seem to spend ages on the obvious bits, then skip through the difficult or confusing bits.

I’m completely lost. Can’t for the life of me figure out where the tape is going. I’ve watched this in slow motion like 12 times and I still can’t figure it out.

Forgive me for offering advice, but....
Best thing to do is get a 'real' one first. By 'real' I mean premade. Shashibo, Geobender, or one of countless cheap Chinese copies, it doesn't matter. My first one was a very cheap Chinese copy, from Amazon, about £11 I think (~$14). It works just fine.
Have a good play with it, until you've got a good sense of how it works. Then try making you own.
I think you'll find it so much easier when you've spent some time with one already.
I haven't actually made my own yet, but I'm really looking forward to having a go. The first I make will be oversized, probably ×2, because I think it will be easier to make a larger identical copy, than a smaller one.
The thing I love about building your own is you can adorn them with any artwork/wrapping that you can get your hands on.
I think they would make a wonderful gift. Every one you give to someone could be totally unique.
      * search on amazon for 3d magnetic shape shifting cube, or perhaps just shape shifting cube.
Things that are worth doing are rarely easy. Good luck!!
