- 1 cup cooked beans
- 1/2 cup avocado
- 1/4 cup tomato
- 1/4 cup cilantro
- 1/4 cup onion
- 1 chile serrano
- Oregano to taste
- Lime or lemon to taste
- Salt to taste
GARBANZO SALAD:
- 1 cup cooked garbanzos
- 1/2 cup cherry tomatoes
- 1/2 cup cucumbers
- 1/4 red cabbage
- 1/2 cup carrots
- 1 or 2 Tbsp Tahini
- Salt to taste
- Lime or lemon to taste
QUINOA SALAD:
- 1 cup cooked quinoa
- 1/2 cup avocado
- 1/2 cup sweet corn
- 1/4 cup green onions
- 1/4 cup tomatoes
- Cayenne pepper to taste
- Salt to taste
- Lime or lemon to taste
LENTIL SALAD:
- 1 cup cooked lentils
- 1/2 cup cactus (nopales)
- 1/2 cup bell peppers
- 1/2 cup mushrooms
- 1/4 cup onions
- Salt to taste
