    I work in the industry where it can get very business/profit focused. It's hard for me to maintain the same passion I had when I was younger, when making dessert was about sharing my love and seeing others enjoy it.
    I came across your channel not too long ago, and I must say, the energy and love you put into making food, and the effort you put into your RUclips videos are an absolute JOY to watch.

      The most difficult part about this pie (for me at least) is finding a place that sells really good strawberries. Drawbacks of living in the city.

    Thank you so much for your Devine recipes Bruno! I love how you prefer using fresh fruit and vegetables especially the abundance of lemon.
    I love almonds and have never thought of using it with strawberries - an absolute favorite of mine. Here in South Africa the strawberries I buy from a nearby farm is 40mm in length and SO sweet and juicy. Would love to see what you would do with these.

      3 g Corn starch

      90 g Powdered sugar
      30 g Almond meal
      2 g Salt
      3 g Vanilla
      50 g Egg (1)
      250 g All-purpose flour
      Egg Wash
      20 g Egg yolk (1)
      10 g Heavy cream
      Pastry Cream
      220 g Milk
      60 g Heavy cream
      5 g Vanilla
      50 g Sugar
      12 g Flour
      12 g Corn starch
      40 g Egg yolks (2)
      15 g Cocoa butter (Optional)
      3 g Gelatin sheet
      20 g Butter
      30 g Mascarpone

    Dear Chef Bruno, I have a question. How can I make a neutral glaze?I always wondered how it's made because it's mostly used on fruit tarts. Could we probably have a demonstration on how to make it?

      Dissolve apricot jam in warm water to a runny consistency and you have a beautiful golden glaze

    Merci Bruno pour cette recette qui est très "pro" et très gourmande. Ce que j'apprécie dans tes recettes, c'est aussi le partage d'une certaine forme de gourmandise et c'est aussi de montrer que la cuisine et la pâtisserie en particulier est une affaire de sensualité. En effet, peu de vidéos montrent le plaisir que l'on a de goûter à sa pâtisserie et pourtant c'est bien parce que cela est bon que l'on aime les faire. Merci aussi pour le retour aux fondamentaux: "...les petits lapins"! 🤣😂

      How about lemon or a strawberry creme, or milk chocolate or dark or white chocolate

    Bruno, how do you choose vanilla ? I bought some hermetically packed vanilla pods. And when I opened packaging - it smelled quite unpleasant, nothing like vanilla essence.
