How to make delicious Ofam| brodo ngo| spiced plantain cake

  • Ofam is a spiced plantain cake that you are bound to love. Growing up, my husband and I both ate a lot of ofam. My mum made it very often, with groundnuts inside...and sometime with hardboiled eggs as well. It was always delicious. To date, every time we visit my mother-in-law, she has one baked and waiting for us. That is how much we love it. I hope you try it!
    Ingredients:
    5 over ripe plantains
    1 cup all purpose flour
    35 grams ginger (about a thumb size)
    3 large shallots
    1 habanero pepper or any hot pepper to taste
    2 sweet peppers (or quarter of bell peppers) of different colours
    1/4 - 1/3 cup palm oil
    1/2 teaspoon salt or to taste

    Very nice plantain cake. Another method to this is to boil like pudding. In Nigeria, we wrap in banana leaves and boil. It's called Ukpo - ogede. Ukpo mean pudding while ogede mean plantain. Plantain pudding. The flour is gotten from dried plantain. Very nice.

    Good idea.
    Next time bake the plantains, mash, and whipped first. Then, you can you corn meal with red and green peppers.

    but this is like Kakro but baked. I thought Ofam, we did not add flour. Other than that, on point.

      Ripe plantains are naturally sweet, so it comes out quite sweet. It's not savory. It's just like making banana bread.
