After the wheel of brie has been cut it will no longer continue with the aging process. After the wheel has been cut you have about 3 days to consume it all and it should be refrigerated during that time. This guy has been traveling with the slice of cheese for 2x weeks letting it age in the car or whever Basically the cheese has gone off and he is eating rotten brie cheese; no wonder he says it's not his cup of tea. LOL!😉
Gene Brodsky Brie Noir is already aged and dried and keeps up to a year, far longer than a normal Brie. I tried it when I first bought it and it was identical - soapy then too! There was no change in it for the two weeks I had it consistently refrigerated.
I haven't met a Brie or any type of cheese that I don't like with the exception of cheese that is made with modified milk which is in about 80% of the cheese here in Canada. Their is a limit on milk production here so you really have to watch your ingredients when buying any dairy here. I just find it odd that the brie tastes like soap; and that if the cheese is aged already say 6x months to a year can 2x weeks really make much of a difference. The only logical solution to me was that it would have allowed enough time to let the cheese spoil. Hence my earlier comment. The other possibility that you might have been sold a bad brie from the get go. At any rate, Cheers and best wishes on your next brie adventure! ;)
Gene Brodsky Hi Gene, Brie Noir is not available outside France, is hard and dark, and is known widely to taste like soap. It's simply not for everyone!
@nightmare Shadow the cheese priduction in France is very strictly controlled. Brie de Meaux is much like Swiss Empenzaller in that the milk cant travel more than 20 km from dairy to cheesemonger.

American "Brie" is bitter and doesnt taste nearly as good as authentic Brie
