The Ultimate Raspberry Chipotle Pork Belly Grilled Cheese

- This crazy idea came to me in the shower. We have had pork belly many times, and LOVE it. We have used the Blue’s Hog Raspberry Chipotle BBQ Sauce also and LOVED it! Why not marry those two together in a grilled cheese sandwich?
Ingredients:
(Makes 4 sammiches)
8 slices of sourdough bread
16 slightly thicker than thick cut bacon slices of smoked pork belly (how to smoke a pork belly: • Smoked Pork Belly 101 )
8 slices of American cheese
Blue’s Hog Raspberry chipotle sauce
1 stick of butter
1 T dried parsley
either 8 minced cloves of garlic, or 1/4 cup of toum (branded as Toom if you get it from Costco like we did)
1. Preheat your griddle to medium high heat.
2. Place the butter, parsley and toum (or garlic) in a skillet.
3. Place the skillet on the griddle until the mixture is melted.
4. Place the pork belly slices on your griddle. Coat the top side with the Blue’s Hog sauce.
5. After 5 minutes or so, flip the pork belly and apply sauce again. Repeat this process until you are happy with the doneness of your pork belly.
6. Dip one side of your bread in the butter mixture and place on griddle to toast. Place a slice of cheese on each slice.
7. When ready, load 4 slices of pork belly each onto 4 slices of the bread. Top your sandwich and continue to toast until you are happy with the level of toast and the cheese is well melted.
8. Serve and enjoy!
