In this process I prepared ginger beer at home.... the additional work I did was I boiled 5 litres of water with lots of shredded ginger and sugar, after cooling this ginger water I added the ginger bug and stored it in an air tight container for 15 days.. and the result was awesome 🙂
The drink is formed by fermentation and fermentation takes best place in a warm and dark environment, because at warmth enzymes multiply faster . In fridge it would remain the same as in low temperature the enzymes become inactive. Hope this helps
