    Maltese tomato paste, known as kunserva, is sweeter and more concentrated than typical tomato paste. It is a cherished ingredient in Maltese cuisine, often made from sun-dried tomatoes.
    Malta, being an island, has a long tradition of fishing. Tuna and anchovies are commonly used, reflecting the local fishing industry and the abundance of seafood in Maltese waters.
    These ingredients grow naturally on the Maltese islands and are common in many local dishes.
    Ħobż biż-Żejt is a popular everyday snack, particularly enjoyed by locals as a quick meal or a picnic item. It’s common to find this sandwich being sold in local markets and food stalls.
    With its straightforward yet flavourful ingredients, the Maltese sandwich serves as a delicious reminder of Malta’s rich history, cultural amalgamation, and Mediterranean lifestyle that emphasises fresh, wholesome, and flavorful food.

    Taking Cooking food back to basics.
    Ingredients:
    - 1 large loaf of crusty bread (such as ciabatta or a traditional Maltese ftira)
    - 2-3 tablespoons of extra virgin olive oil
    - 3-4 tablespoons of tomato paste
    - 1 can (approximately 140g) of tuna in olive oil, drained
    - 4-5 anchovy fillets, drained and finely chopped
    - 10 - 20 Butter beans - I didn't use any
    - 1-2 tablespoons of capers, rinsed and drained
    - 10-12 black olives, pitted and sliced
    - Salt and freshly ground black pepper to taste
    Change the flavours to suit your tastes - I added sliced tomatoes and some mint leaves.

      Sharon I grew up with a english and half maltese family the father was maltese he was always getting us kids to cook maltese dishes including this sandwich. I remember butchering a chicken maltese style in the rear garden, maybe you can help I can't think of the dishes name is it pata Al forno. Again very simple but delicious sliced potato onions and mince meat bake it in the oven. I know how to make it I just forgot what it is called.       @@chucky2316 hi!….that’s All very interesting and truly sweet. We do alot of ‘patata l-forn’, however as I know it, its sliced onions, sliced potatoes top and bottom and any kind of meat in between, being any part of chicken or pork mostly, obviously with seasoning, oil etc.. Am not sure about the mince meat recipe, maybe I’ll remember it eventually. 🙏🏻❤️😊

    In Malta we also sometimes put butter beans on the sandwich and anchovies to me really bring the sandwich to life . Yours looks amazing as well

    I love Malta and have been there many times. Their specialty are a fish called talpuqi and rabbit and goat cheese. I expected teared rabbut roast or rabbit liver. Their sour dough bread is also great. But I accept this as a comfort food for melancholic lighthouse operator.

    Lovely options for summer travel as canned fish is practical option due to no refrigeration required. The olives and capers in brine solution also can stay on the counter of the Recreational Vehicles (RV) ....plus the old cat enjoys the tuna water its packed in and my dogs have always licked up the water off sardines packed in water, later the cans go to the recycling bins thus waste is minimal. Low washing up is also appreciated when traveling as potable water is often in limited supply. Wine optional but would complement this sandwich.

    Looks fabulous., all my favourite ingredients together .. I am just about to have fantastic minestrone soup ... The ends (being Scots, would call them heels) off the crusty bread would go great with it... Pity you are so far away!!!!

    That's what i call a sandwich !
    I like capers in vinegar rather than brine but they're quite hard to get. It's so lovely I'd serve it as an open sandwich and use a knife and fork. 😀

    Well done ❤ But you will never replace the Maltese bread, its done also with a thing we call a maltese fitria, which is made fresh everyday in local villages the traditional way is with fresh soft Maltese tomatoes in the summer directly rubbed on the bread and paste in winter, and there must be a pickle, and capers , the best eaten on the beech 😂

    I remember being in the tinned fish isle looking for anchovies in Morrisons and asked a young lad who worked there if they had any anchovies… he said, ‘Oh they won’t be over here!’ and proceeded to lead me to the vegetable isle and searched between the courgettes and peppers for ages muttering ‘they’re over here somewhere’. I think of him whenever I buy anchovies… or aubergines… or artichokes! Lol.

      Oh man! Been in that situation. Good luck! I started living off bread puddings - not the sweet kind, savoury. I learned very quickly to knock up some real easy filling meals.       It’s not easy at times pal, but hope that you manage to pick up some bargains in the yellow sticker aisle to keep you fed till pay day - a big bag of pasta, tinned tomatoes & some marked down veg can go a long way to filling you up when things are tight! Take care & good luck 🤞👍

    I love this sandwich ! ." My twist" I spiced the tuna with hot paprika , instead the tomatoes sliced hard - boiled eggs .

      @@BackyardChefTry adding artichokes in oil if yo want to keep it authentic. However as a Maltese, if you want to add avocado, you can try, but first try it without. Pickles are often added and anything else you fancy (including the the Maltese bean pate known as bigilla)

      The main thing to stress is your point of making substitutions as required, eg the bread.

      Looks fab as usual, Rik. I would use roasted vegetables (peppers, eggplant, zucchini, onions) and add canned artichoke hearts. Plus some fresh tomato slices, olives, lemon pepper, olive oil. Could just be veg or have the tuna or chicken. Lots of variations but a dandy sandwich.

      Hello Rick, I grew up in Malta and am visiting here right now, we used to make these sandwiches to eat at the beach on warm summer nights. There’s nothing as good as the Maltese bread. So yummy. 😋

    Another delicious looking sandwich Rik, & this one’s a much healthier option than the other day!😁 That’s a good looking grill press you have there, bet it makes some delicious panini sandwiches!😋 I’m very old fashioned when it comes to creating sandwiches, usual bread with butter or mayo with whatever filling, would never have occurred to me to use tomato paste in a sandwich, will definitely give this one a go!     If I felt better, that sandwich would sound delicious. But to be honest, I would be happy with the sliced bread and some butter. I could see serving that sandwich at a Sunday brunch at the country club where I used to work. Thanks rik 🩷🩷🩷👏

    Maltese bread is fantastic. Bought fresh from the bread van that comes round every day - well at least it did last time I went. I don't like capers or olives though.

    Another good looking recipe. I just finished the beef and bean chili Mac from yesterday. As I suspected, it is fantastic. By the way, when do you sleep? By my calculations, you answered my comment about 3 a.m. UK time as it was about 8 p.m. NY time !

    I can't get capers when I am and don't think there's really a substitute so will have to leave them out but looking forward to getting the remaining ingredients next time I go shopping so I can give this sandwich a go. Cheers Rik!

    Brilliant. I don't like olives, but this would be delicious without them! I've looked through most of your recipes and I don't see "chicken fried steak" aka "country fried steak". Not a lot of ingredients but it's good with mash and peas, corn, carrots, or just a good old fashioned biscuit or yorkshire pud. Maybe a suggestion for a future video if it tickles your fancy.

    Ugh green olives not black on the sandwich it gives you memories of the salt water of the Mediterranean Sea and Maltese Ftira. Black olives are memories of Greece.
