When adding other ingredients to flour tortillas, like spinach, add water a little at a time. All flours are different and the amount of water and spinach you use can require less or more water.

Literally any liquid will work. Tortillas are traditionally made with chicken broth, water, milk, squid ink, tears of angels . . . .
FORGOT TO SAY: The high fat content of the heavy cream takes the place of lard, again, traditionally used in tortilla making.

Mine want to shrink back when rolling, even after resting 1.5 hrs...? Maybe too wet?/dry?. They taste good though.
