This is a great recipe! We use to do this back in the "adkins diet" craze days, (many many years ago). If you don't like Zucchini, you can use portabella mushroom caps (really good!)
That is some cool oven you have - pop the tray into the upper ones and it comes out of the lower one ;-) I like this recipe as it is quick and tasty - I always put a little chili on it

People that don't vegetables are only the ones who doesn't know how to cook them. If the only thing you know about broccoli is boiled broccoli, then that explain everything.

Another good soda alternative is Zevia. It's sweetened with stevia. Good stuff. The root beer is my favorite.
